CHEX MIX

THERE ARE DIFFERENT VARIETY OF CHEX MIXES TO TRY IN FHE FOLDER

CHEX CARAMEL CHOCOLATE DRIZZLES
Scott saw this on the back of the Chex box and wanted to try it.  Jackson made it one Sunday night and everyone loved it!  We had it for dinner with apples, celery and peanut butter.

Ingredients
3cups Corn Chex® cereal
3cups Rice Chex® cereal
1/2bag (14-oz size) caramels (about 25)
2tablespoons butter or margarine
2tablespoons milk
1/4cup semisweet chocolate chips
Tips
How-To
For easy drizzling, spoon the melted chocolate into a small food-storage plastic bag. Snip off one tiny bottom corner and squeeze the chocolate over the cereal mixture.
Preparation Directions
1.In large microwavable bowl, mix cereals.
2.In medium microwavable bowl, microwave caramels, butter and milk uncovered on High 2 to 3 minutes, stirring after each minute, until caramels are melted and mixture is smooth. Pour over cereals; gently stir until evenly coated.
3.Microwave on High 3 to 4 minutes, stirring after each minute, until just beginning to brown. Spread on waxed paper to cool.
4.In small microwavable bowl, microwave chocolate chips uncovered on High about 1 minute or until chocolate can be stirred smooth. Drizzle over snack. Refrigerate until set. Store in airtight container.

CHEX PARTY MIX
1/4 cup margarine or butter, melted
4 1/2 tsp. Worcestershire Sauce
1 1/4 tsp. Seasoned Salt
8 cups Chex cereal
1 cup Peanuts
1 cup pretzels

Combine butter, Worcestershire sauce and seasoned salt; mix well. Pour cereal, nuts and pretzels into large ziplock bag or a big bowl.
Pour margarine mixture over cereal mixture inside bag or bowl. Shake or mix until well coated.
Oven:
Preheat oven at 250. Pour contents into a roasting pan. Bake 1 hour, stirring every 15 minutes.
Microwave:
Pour into a large microwave safe bowl. Microwave on high 5-6 minutes, stirring every 2 minutes. Make sure to scrap sides and bottom of bowl.
Crockpot:
Cook on low for 2 1/2 hours, stirring every 30 minutes. Remove lid and cook another 30 mintues on Low. (a recipe with different ingredients - crockpot cookbook pg. 17)

Cool on paper towels and store in a airtight container.

Mexican Hot Chocolate Chex® Party Mix

I liked this but not as much as I thought I would.  Like the healthified pumpkin (see below) better.  Think I might like this better without the vanilla chex. Next time I would add an extra cup of the other cereals and eliminate the vanilla.
Mexican Hot Chocolate Chex® Party Mix
Savor the flavors of Mexican Hot Chocolate any time of year in this dynamite party mix.

cups Chocolate Chex® cereal

  1. In large microwaveable bowl, measure cereal. Set aside
  2. In 2-cup microwavable measuring cup, heat butter and chocolate chips on High 1 minute or until almost melted; stir and microwave another 30 seconds or until mixture can be stirred smooth; stir in condensed milk, heat 30 seconds or until boiling; stir in cinnamon. Pour over cereal mixture, stirring until evenly coated.
  3. Microwave on High about 3 minutes, stirring every minute, until mixture is glazed. Stir in coconut and marshmallows. Pour onto waxed-paper lined pan to cool.
Makes 16 servings

CHEX PUMPKIN PIE CRUNCH
This was really good.

1/4cup brown sugar
1tablespoon pumpkin pie spice
1/4 cup butter
teaspoons vanilla
cups Cinnamon Chex™ cereal 
cups Wheat Chex™ cereal
cups Honey Nut Chex™ cereal 
oz pecans
 In small bowl, mix brown sugar and pumpkin pie spice; set aside. In small microwave-safe dish, microwave butter on High about 30 seconds or until melted. Stir in vanilla. In large microwavable bowl, mix all cereals and pecans. Pour butter mixture over cereal mixture, stirring until evenly distributed. Add sugar and spice mixture and stir until coated. Microwave uncovered on High 5 minutes or until mixture begins to brown, stirring every minute. Spread on wax paper or a cookie sheet to cool. Store in airtight container.

CINNAMON-APPLE CHEX MIX
We really liked this. Easy to make.
5 cups Wheat Chex cereal
1 cup whole almonds (can use lightly salted)
1/4 cup butter or margarine
1/3 cup packed brown sugar
2 TBSP light corn syrup
1 tsp cinnamon
1 cup chopped dried apples
1/2 cup vanilla yogurt-covered raisins
Heat oven to 300. In an ungreased 9x13, mix cereal and almonds. In a saucepan mix butter, sugar, corn syrup and cinnamon to boiling over medium heat, stirring frequently. Pour over cereal mixture, stirring until evenly coated. Bake for 15 minutes. Stir in apples; bake 15 minutes longer. Spread on waxed paper or foil to cool. Place in a serving bowl; stir in raisins. Store in airtight container.

Healthified Chex® Pumpkin Pie Crunch
Makes the apartment smell so yummy and is really good.

Ingredients

Directions

Trick Or Treat Muddy Buddy Mix

We all really liked this.  Perfect treat while we were carving pumpkins.
  • 9 cups Corn or Rice Chex Cereal
  • 1 cup semi-sweet chocolate chips
  • 1/4 cup butter
  • 1/2 cup peanut butter
  • 1 tsp vanilla extract
  • 1 1/2 cups powdered sugar
  • 1 1/2 cups candy corn
  • 1 1/2 cups Reese’s Pieces
  • 2 cups mini marshmallows
  • 2 cups pretzels (minis, regular, sticks or squares)
Instructions
  1. 1. Pour the Chex Cereal into a large bowl and set aside.
  2. 2. In a microwave safe bowl melt chocolate chips, butter and peanut butter together on high for one minute. Stir and return to microwave, microwaving in 30 second increments until melted together and smooth. Stir in vanilla.
  3. 3. Pour chocolate-peanut butter mixture over the cereal and gently stir to coat.
  4. 4. Place cereal in a large zip lock bag, pour powdered sugar in, seal and shake until evenly coated.
  5. 5. Spread cereal out on to wax paper and let cool completely.
  6. 6. In a large bowl combine cereal, candy corn, Reese’s Pieces, marshmallows and pretzels. Store in an air-tight container or Ziploc bag.
  7. Enjoy!


Cake Batter Buddies

These are so yummy!  In the following ways I liked them better than Muddy Buddies: easier to make, not as messy or not as sweet
5 cups rice chex cereal
10 oz (5 squares) vanilla flavored almond bark
1 tsp vegetable shortening
1 1/2 cups cake mix (any kind will do) - next time I would do only 1 cup
1/2 cup powdered sugar - next time I would do 1/4 cup

Melt almond bark according to package directions, adding vegetable shortening to thin. Pour the cereal into a large bowl and drizzle the melted almond bark over the cereal. Mix gently with a large spoon or spatula. Dump the cake mix and powdered sugar onto the cereal and mix gently with spoon until all the cereal is evenly coated.


Cookies and Cream Puppy Chow
ingredients

"Cream" Puppy Chow:

5 C. rice chex cereal

1 C. white chocolate melts (or chocolate chips)
8 Oreos finely crushed
1/2 C. powdered sugar
"Cookies" Puppy Chow:
5 C. rice chex cereal
1 C. milk chocolate melts (or chocolate chips)
8 Oreos finely crushed
1/2 C. powdered sugar
Extra chopped Oreos

directions

1. "Cream" Puppy Chow: Measure out rice chex cereal and place in a large bowl.

2. Measure out powdered sugar and crushed Oreos and place in a large plastic bag or in a large tupperware with a lid (You'll need to shake the bag/tupperware later).

3. Melt white chocolate and stir until smooth.
4. Pour melted chocolate over rice cereal and stir until coated.
5. Transfer chocolate coated rice cereal into your plastic bag with sugar/cookies. Shake, shake shake until coasted.
6. Dump onto a cookie sheet to cool.
7. Repeat steps 1-7 using "Cookies" Puppy Chow ingredients.
8. Once cooled, mix the "Cookies" and "Cream" Puppy Chow together and fold in extra chopped Oreos.

SNACK MIXES

CRISPIX MIX S'MORES
BEYOND TASTY!!! Found this on the back of a Crispix box. My kids love mixes like this - especially when traveling.

3 cups Crispix cereal
1 cup Teddy Grahams
---
1/4 cup butter, melted
1 T brown sugar
1/2 tsp. cinnamon
---
1 cup miniature marshmallows
1/3 cup M&M's

In a 9x13 mix cereal and Teddy Grahams. In a small bowl, stir together butter, brown sugar and cinnamon. Drizzle over cereal mixture. Stir until coated. Bake at 250 for 45 minutes, stirring every 15 minutes. Spread on foil. Cool completely.

Stir in marshmallows and M&M's. Store in airtight container at room temp for up to 1 week.

9 cups Golden Grahams or Rice Chex
8 cups Corn Chex
2 cups Coconut
1 cup nuts
Bring to a boil and boil for 2 minutes:
1 cup sugar
1 cup light karo syrup
3/4 cup butter
Pour on cereal. Cool and enjoy!

HEARTY MULTIGRAIN SNACK
We all really liked this - made it for FHE. Good one for the kids to help with. Needs to cool for about 30 minutes.

1 egg white
1/4 tsp salt
1/3 cup packed brown sugar
1 tsp cinnamon
3 cups MultiGrain Cheerios
1/3 cup chopped pecans

Heat oven to 300. Lightly grease cookie sheet.

In a large bowl, beat egg white on high speed until foamy; beat in salt. Gradually beat in brown sugar until thick and glossy. Gently stir in cinnamon, cereal and pecans until completely coated. Spread as thinly as possible on cookie sheet.

Bake 12-15 minutes or until set. Immediately remove cookie sheet to cold cookie sheet or large pan. Cool completely, about 30 minutes. Break into pieces. Store in airtight container.

GULOSH
Took to Oregon Coast for Gray/Nelson Olympics. Remember Mom bringing on camping trips. Fun part about Gulosh is you can put in it whatever you want.

Easy to make. Have taken to many parties. Goes over well.

POPCORN - using Whirley-Pop
Butterscotch Almond Popcorn Mix (popcorn cookbook pg. 10)
Make popcorn with 3/4 cup kernals and oil
Melt a bag of butterscotch chips (we like Guittard)
Put popcorn in a large bowl (we use biggest silver bowl). Add 2 cups slivered almonds. Cool on a cookie sheet or wax paper. Makes about 6 cups.
One of Lisa's and kids favorites.
Snap-Crackle Popcorn and Nuts (popcorn cookbook pg. 24)
About 2 hours before serving; preheat oven to 250. Placed popped popcorn, pecans and walnuts in lare roasting pan; set aside.
Prepare carmel coating. In a 2-quart sauce pan over medium heat. Heat sugar, butter, corn syrup and salt to boiling. Boil 5 minutes, stirring frequently. Remove saucepan from heat and stir in vanilla.
Pour hot mixture over popcorn mixture, stirring to coat well. Bake mixture for 1 hour, stirring occasionally.
Spoon caramel-covered popcorn onto waxed paper to cool, stirring occassionally to seperate. Store in airtight container and use within one week - shouldn't be a problem, this is very good! Makes 21 cups.

SWEET TOUCH GLAZED POPCORN (popcorn cookbook pg. 27)
Pour into popper:
1/3 cup kernals
4 tbsp sugar
4 tbsp oil
Cook on stove. Put on Pam sprayed cookie sheet to cool. Immediately soak popper in soap water.
CORNY SNACK MIX
Yum! Very good!
3 quarts popcorn (whirly pop 3/4 cup)
1 pkg (15 oz) Corn Pops
1 pkg (15 oz) corn chips (used Fritos)
2 pkgs (10-12 oz) vanilla or white chips
In two large bowls combine everything but the chips. Melt and pour over popcorn mixture. Cool in bowls or on two cookie sheets.
