ARUGULA AND SPINACH STIR FRY
We doubled this but could of tripled it. Cooked down a lot. Scott made it and didn't add any curry, but it would have been so good with it.
1 cup chopped arugula
1 cup chopped spinach
1 large onion chopped (would not double)
3 green chilies chopped (used 1 can diced green chiles)
salt to taste
1 T oil (just use vegetable broth)
1 spring curry leaves
2 T grated coconut (used Trader Joe's chunks)
1/2 tsp mustard seed
Heat pan and add mustard seeds. When they begin to splutter add the onion, green chilies and curry leaves and fry until onions are slightly brown.
Toss in greens.
Add salt and coconut.
Cover and cook for a few minutes till all the water dries.

IMPOSSIBLE PIE
IMPOSSIBLE PIE
Used this as part of a lesson on how Heavenly Father can do the impossible (Living Scriptures lesson) (see below). This was such an easy pie to make and it did separate like it was suppose to. Even Abagail liked it and she doesn't like coconut. Tasted like a buttermilk pie.
1/2 cup butter, softened
1/2 cup flour
1 cup sugar
2 tsp vanilla extract
4 eggs
2 cups milk
1 cup shredded coconut
Preheat oven to 350F. Add all ingredients to a large bowl and beat together until combined. Pour into a 9-inch greased pie pan. Bake for 1 hour or until center is firm and pie is golden. Cool on a cooling rack and then put in the fridge until ready to serve. It is recommended to let the pie cool for a few hours so it has a chance to firm up.

We had this Thanksgiving 2016. Everyone really liked but they didn't put on the bananas.
1 unbaked 9" pie crust
1 cup granulated sugar
1/4 cup packed brown sugar
1 1/4 cups sweetened, shredded coconut
1 1/4 cups chopped pecans
1 1/2 cups graham cracker crumbs
6 oz semi-sweet chocolate chips (about 1 cup)
1/2 teaspoon salt
6 egg whites
Bananas and lightly sweetened whipped cream for serving
Preheat the oven to 350°F. Set the unbaked pie crust aside. You can use a frozen store-bought crust or make your own from scratch. In a large bowl, combine granulated and brown sugars, coconut, pecans, graham cracker crumbs, chocolate chips, and salt. Stir until combined. Add the egg whites, and mix with a large spoon until the egg whites are evenly distributed and the mixture is uniformly coated. Spread the mixture in the prepared pie crust and bake for 30 minutes, until the top of the pie is golden and feels firm and set to the touch. Remove from the oven, allow to cool completely, and serve topped with fresh banana slices and whipped cream.

- 3 egg yolks
- 1/2 c. butter
- 1 1/3 c. flaked coconut
- 1 c. chopped pecans
- 1 tsp. vanilla extract
- 7 Tbsp. butter, divided
- 1 1/2 c. chopped pecans
- 1 1/2 c. brown sugar
- 3 T. flour
- 1 1/2 c. light corn syrup
- 1 1/2 c. evaporated milk
- whipped cream (for topping), to taste
For the Waffles: (makes about 5 servings - see above)
For the Coconut Frosting: (makes appx. 12 servings - see above)
For the Praline Pecan Syrup: (makes 8-10 servings)
Instructions
- In a large mixing bowl, combine flour, sugar, baking powder and cocoa powder.
- In another bowl, lightly beat egg yolks.
- Add milk, butter and vanilla; mix well. Stir into dry ingredients just until combined.
- Beat egg whites until stiff peaks form; fold into batter.
- Bake in a preheated waffle iron according to manufacturer's directions.
- In a medium-sized saucepan over medium heat, cook the condensed milk, egg yolks, and butter 10 minutes, stirring constantly, until bubbly.
- Remove from heat, and stir in the coconut, pecans, and vanilla.
- Allow to cool about 5-10 minutes.
- In a heavy saucepan over medium heat, melt 3 Tbsp. butter. Add pecans and cook 5 minutes or until browned.
- Remove from heat and place pecans in separate bowl. Set aside.
- Using same saucepan, melt remaining butter (4 Tbsp.)
- Whisk in brown sugar, flour, and corn syrup until thoroughly blended.
- Cook on high for 6-8 minutes until sugar is dissolved and syrup slightly thickens.
- Remove from heat and allow to cool about 2 minutes.
- Stir in evaporated milk and pecans.
- Top waffles with coconut frosting, drizzle with praline pecan syrup and top with whipped cream.

COCONUT TOAST

This is super yummy! Goes great with anything. This is found in the Taste of Home Family Collection pg. 37.
1 cup flaked coconut
1 cup sugar
1/2 cup butter, melted
1 egg, beaten
1 tsp vanilla
11-12 slices white bread (Texas Toast works great!)
In a bowl, combine the coconut, sugar, butter, egg and vanilla. Mix well. Spread over each slice of bread; place on ungreased baking sheets. Bake at 350 for 15-20 minutes or until lightly browned.

This is a super yummy and easy salad to make. Found in Pima cookbook pg. 33.

MOUNDS CAKE
This cake is really good and rich! Would be a good one to make when taking a meal and keep half and give the other half away. Abagail didn't like all the coconut (maybe less next time). She gave it a 5, Jackson gave it an 8, Scott a 9 and me a 9. I think it would be fun next time to try with dark chocolate.

2 cups sugar (divided)
24 large marshmallows
1 1/2 cups milk (divided)

Mom’s No-Bake Crazy Cookies of Incomparable Delight
Makes about 2 dozen cookies, depending on the size of your scoops
1 cup natural peanut butter
3 cups oatmeal
2 cups of sugar
4 tbsp unsweetened cocoa powder (Dutch-pressed if you have it)
1 stick of butter
½ cup milk
1 cup nuts (optional – if using, try walnut or pecan pieces)
Whatever filler you like—coconut, M&Ms, chocolate chips, raisins. . .
3 cups oatmeal
2 cups of sugar
4 tbsp unsweetened cocoa powder (Dutch-pressed if you have it)
1 stick of butter
½ cup milk
1 cup nuts (optional – if using, try walnut or pecan pieces)
Whatever filler you like—coconut, M&Ms, chocolate chips, raisins. . .
Bring the sugar, cocoa, butter, and milk to a simmer in a large pan, stirring or whisking until the sugar is dissolved and the ingredients are combined. When combined, remove from heat and add in the rest of the ingredients, stirring until it all comes together. The “dough” will be sticky and smell like a dream come true. Scoop pieces of the dough big as you like onto waxed paper and let cool. When cool, they’ll be less sticky and quite easy to handle. Dangerously easy. Enjoy with a tall glass of milk while catching up with your loved ones.
In one of 24 cookies: 207 calories, 10 g fat, 10.6 mg cholesterol, 59 mg sodium, 23 mg potassium, 26 carbohydrates, 17.5 g cookies, 4 g protein.

INGREDIENTS
- 1 cup oatmeal (not quick)
- 2 1/4 cup flour
- 1 teaspoon baking soda
- 1 teaspoon salt

- 1 cup butter, room temperature
- 1 1/4 cup light brown sugar
- 1/2 cup dark brown sugar (per food network 1/4# white sugar & .75 ounce of molasses -mix in food processor for 30 seconds)
- 2 large eggs
- 1 tablespoons vanilla
- 1 cup coconut
- 12 oz. semisweet chocolate chips
DIRECTIONS
- Preheat oven to 350 degrees. Put the top 4 ingredients into a food processor or blender and blend about 30 seconds until coarse. Set aside. In a large bowl, beat the butter for 30 seconds until light in color. Add the sugar, eggs, and vanilla. Next, add the dry ingredients then add the coconut and chocolate chips.
- Shape cookie dough into balls and place on cookie sheet. Bake for 12-13 minutes. Let the cookies cool slightly before removing them from the pan to a wire rack. Makes about 2 dozen cookies.

UPDATE: I made these one day and totally messed up. I added whole wheat flour and white flour (so it was double the flour). Couldn't figure out why they were so crumbly. Figured out my mistake so then I doubled the batch. It didn't really work. Basically it turned into granola. The cookies would never stick together. But Scott loved it like that. He ate it like granola. I had also added peanut M&M's which made it really good.

I haven't made these cookies with refined coconut oil but it should work also. The best way to describe the texture of the coconut oil should be sludgy. You don't want it completely melted but it shouldn't be completely solid. I usually scoop the coconut oil into a microwaveable liquid measuring cup or bowl and microwave for a couple of seconds (but usually my kitchen is warm enough that the coconut oil is the right consistency right out of the container).
Also, if using freshly ground whole wheat flour that is slightly warm from being ground, either let the flour come to room temperature or else chill the cookie dough for an hour or so, otherwise the cookies will spread while baking. I haven't made these with hard red wheat (only hard white wheat) but I'm sure that would work fine also; the cookies will be slightly darker in color and a bit more heartier tasting.
Finally, for those that are wondering about the oats, the reason I use both quick and old-fashioned is because I like the texture of the old-fashioned oats but using 100% causes the cookies to spread really flat - subbing out part of the old-fashioned with the quick allows the cookies to keep their soft, chewy shape while still giving lots of oat flavor.
UPDATE: After a few commenters indicated their cookies weren't spreading well, I ran into the kitchen to remake the recipe and weighed the flour this time in order to get the perfect amount. I've adjusted the flour amount from 2 3/4 cups in the original recipe to 2 1/2 cups (or 11.5 ounces). It really depends on how you measure the flour and if you are using freshly ground wheat flour or storebought (which tends to be slightly more compressed). Make sure to fluff the flour and measure lightly (as opposed to measuring out super compressed flour or shaking the cup to level). Thanks to those of you who made the recipe so quickly and reported back! If your cookies are still spreading using 2 1/2 cups flour, you may be overflouring and measuring too much flour in your cup.

In a large bowl, cream together the brown sugar, granulated sugar and coconut oil until light in color, 1-2 minutes. Add the eggs and vanilla and whip the mixture for 2-3 minutes. Stir in the flour, baking soda, salt, and oatmeal until barely combined - there should be a lot of streaks of dry ingredients remaining. Add the chocolate chips and mix until combined.
Scoop and roll the cookie dough into 1-inch (or so) balls and place 1-2 inches apart on a lined (with parchment or a silpat liner) or greased baking sheet.
Bake for 11-13 minutes until the edges are lightly golden and set but the middles are still soft.
Let the cookies sit for 2-3 minutes on the baking sheets after removing them from the oven before using a spatula to place them on a cooling rack to cool completely.

These are beyond tasty. Next time I would like them with ice cream to help balance out the sweetness. I froze half of the pan (cut them into pieces and wrapped individually). Did the parchment paper idea (see bottom). Liked how it turned out.

With my serving I would mix the two together. Yum! Tasted almost like the germanchocolate ice cream I use to get at Cold Stone that was my favorite. Makes a 9×13″ pan
- 3 (4-ounce) bars of Baker’s® German’s® Sweet Chocolate (a total of 12 ounces; use 2 bars for melting and stirring into batter; coarsely chop the third bar to mix into the batter–or you can omit this chopped chocolate bar if you want)
- 3/4 cup (1 1/2 sticks) butter
- 1 1/2 cups sugar
- 4 eggs
- 2 teaspoons vanilla
- 1 1/2 cups all-purpose flour (regular or unbleached)
- 2 teaspoons baking powder
- 1 teaspoon salt
- 1 cup chopped pecans
- Coconut Pecan Frosting (see recipe below)
- Preheat oven to 350 degrees. Grease and flour a 9×13″ baking pan, or line pan and sides with parchment paper (leave a little extra parchment paper sticking out so you can grab edges to lift brownies out of pan after they’re frosted and cooled; the brownies are really easy to cut when they’re out of the pan).
- Coarsely chop 1 of the 4-ounce bars of chocolate, if using, and also chop enough pecans to equal 1 cup; set these ingredients aside. Note: the chocolate bar will be easier to chop if it’s been chilled in the refrigerator.
- Microwave 2 of the 4-ounce chocolate bars and butter in a large microwaveable bowl for 1 to 2 minutes or until butter is melted. Remove from microwave and stir chocolate and butter together until chocolate is completely melted. Add sugar to chocolate-butter mixture, blending well; then add eggs and vanilla, blending well. Add flour, baking powder, and salt, mixing until blended. Then fold in the chopped chocolate, if using, and pecans from Step #2. The batter will be fairly thick.
- Spread your batter evenly into the prepared 9×13″ pan and bake for 35-38 minutes, or until top middle of brownies is set and toothpick inserted in center comes out almost clean–it won’t come out completely clean because of the chopped chocolate in the batter. If you decide to omit the chopped chocolate in the batter, your baking time may be a little less, like 32-36 minutes. Cool brownies completely before adding the frosting…
COCONUT PECAN FROSTING
- 3 egg yolks
- 1 1/4 cups sugar
- 1/2 cup butter (1 stick)
- 1 teaspoon vanilla
- 1 (12-ounce) can evaporated milk
- 2 1/2 to 3 cups sweetened flaked coconut
- 1 1/2 cups chopped pecans
- added 1/2 cup chocolate chips. Was good but don't think it is necessary. Or maybe cocoa would be better and not so rich?
In a medium saucepan, stir together the egg yolks, sugar, butter, vanilla, and evaporated milk until well blended. Cook this mixture over medium heat for about 15 minutes, stirring constantly, until thick and bubbly. Remove from heat and stir in the flaked coconut and chopped pecans, blending well. Let mixture cool for about 30 minutes, then give it a final stirring and spread evenly over the completely cooled brownies.
Slicing these brownies will be easier and less gooey if you put them in the refrigerator (while still in the pan) for 10-15 minutes, or longer if you want. If you used parchment paper, you can just lift the brownies right out of the pan and slice them on a flat surface…it’s so easy to slice brownies and cookie bars using parchment paper that way!
By the way, I learned something interesting about German Chocolate…I thought it was a type of chocolate originating from Germany, but according to Joy of Baking, it actually is a baking chocolate that was created in 1852 by Samuel German, an employee of Walter Baker & Company. He added sugar to this baking bar so it would be more convenient for bakers to use (as opposed to unsweetened chocolate baking bars). So, the correct name of this chocolate isGerman’s® Sweet Chocolate, and it is still sold by Baker’s®.
If you don’t happen to have German’s® Chocolate on hand for a recipe and you’re in a pinch, you can substitute 1 ounce (30 grams) of bittersweet or semisweet chocolate plus 1/2 tablespoon (7 grams) granulated white sugar for 1 ounce of German’s® Chocolate.

Scott really liked these. I didn't like them as much as I thought I would, but did like them. They are easy, easy to make. I think next time I will try them with the coconut. I think I might like them better.

Peanut Butter Chocolate Bars

1 (18.25) package plain yellow cake mix
1/2 cup butter, melted
1 cup creamy peanut butter
2 eggs
1 (12 oz) package semi-sweet chocolate chips
1 (14 ounce) can sweetened condensed milk
2 Tablespoons butter
2 teaspoons vanilla
1 cup coconut (optional...my sister did not like the texture of it in there)
Directions:
1) Preheat oven to 325 degrees.
2) Combine cake mix, melted butter, peanut butter, and eggs in a large bowl using a mixer or spoon. Press this into a 9X13 pan reserving 1 1/2 cup of the mixture to crumble on top.

5) Bake for 20-25 minutes. Cool completely before cutting into bars.

Ingredients
- 1/2 cup (1 stick) unsalted butter, melted, plus more for baking pan
- 1/2 cup packed light-brown sugar
- 1 cup granulated sugar
- 3 large eggs
- 2 cups all-purpose flour (spooned and leveled)
- 1/2 teaspoon fine salt
- 1/2 cup chopped macadamia nuts
- 1 tablespoon finely grated lime zest
- 1/2 teaspoon pure vanilla extract
- 1 package (7 ounces) sweetened shredded coconut
Directions
- Preheat oven to 375 degrees. Butter a 9-inch square baking pan; line with parchment, leaving a 2-inch overhang on two sides. Butter parchment. In a large bowl, whisk butter, brown sugar, and 1/3 cup granulated sugar. Add 1 egg; whisk until smooth. Stir in 1 cup flour, salt, nuts, and lime zest. Spread batter in pan. Bake until top is set and very light golden, 15 to 18 minutes.
- Meanwhile, in a medium bowl, whisk together 2/3 cup granulated sugar, 2 eggs, and vanilla. Reserve 1/2 cup coconut; stir remaining coconut and 1 cup flour into egg mixture. Gently spread over base; top with reserved coconut. Bake until golden and a toothpick inserted in center comes out with moist crumbs attached, 25 minutes. Let cool completely on a wire rack. Using parchment, lift cake from pan and cut into 24 bars.

My mom sent me this recipe. She really likes it - and I agree. They are yummy and so easy to make. I drizzled chocolate on top - would be good dipped in chocolate too. Used the fresh coconut we got from Bountiful Baskets.

- 2-1/2 cups flaked coconut
- 1/3 cup all-purpose flour
- 1/8 teaspoon salt
- 2/3 cup sweetened condensed milk (didn't have on hand - used recipe in McCleve 2nd edition cookbook for substitute)
- 1 teaspoon vanilla extract
Directions
- In a small bowl, combine the coconut, flour and salt. Add milk and vanilla; mix well (batter will be stiff).
- Drop by tablespoonfuls 1 in. apart onto a greased baking sheet. Bake at 350° for 15-20 minutes or until golden brown. Remove to wire racks. Yield: 1-1/2 dozen.

The kids were fascinated with coconuts for some reason. So I noticed they were on sale at Broulim's and bought one. The first one we bought was bad inside, so we got another one. We cracked it open and tried to drink the juice - none of of liked it. Then I froze the coconut for about 30 min and then we were able to separate the flesh from the shell. Then I shredded it in the food processor to prepare to make this ice cream. Scott thought it would be good next time to make chocolate ice cream and then add the coconut. Or I found the below chocolate sauce that would be good too.

- 4 cups half-and-half
- 1 cup sugar
- 1 (10-ounce) package frozen coconut, thawed
- Pinch salt
- 5 egg yolks
Directions
In a non-reactive saucepan, combine the half-and-half, sugar,coconut, and salt, over medium heat. Bring the cream to the boiling point and scald it. Remove from the heat. Beat the egg yolks in a bowl. Add the cream mixture, about 1/4 cup at a time, to the beateneggs, whisking in between each addition, until all is used.
Pour the mixture into a saucepan, and cook, stirring, over medium heat, for 2 to 3 minutes, or until the mixture becomes thick enough to coat the back of a spoon. Remove from the heat and cool completely.
Pour the filling into the ice cream machine and follow the manufacturer's instructions for churning time.
Mexican Chocolate Sauce:
- 3/4 cup half-and-half
- 1 tablespoon unsalted butter
- 1/2 pound Mexican chocolate, chopped
- 1/4 teaspoon pure vanilla extract
Combine the half-and-half and butter in a small heavy-bottomed saucepan over medium heat. Heat the mixture until a thin paper-like skin appears on the top. Do not boil. Add the chocolate and vanilla and stir until the chocolate melts and the mixture is smooth.
Remove from the heat and let cool.
The sauce can be kept refrigerated for several days, but it must be returned to room temperature before serving.
