PUT-IT-ON-ALLTHETHINGS CILANTRO RANCH DRESSING

Jenn made this dressing when we were in Washington.  It was so delish!  We were dipping it with Taquitos.  Would be good on salad, burritos, quesidallas, burgers etc.

Put-It-On-Allthethings Cilantro Ranch Dressing And Sauce

Makes 2 cups

  • 1 cup bottled salsa verde
  • 1 (0.4 oz) packet buttermilk ranch dressing mix (or the homemade equivalent)
  • 1/3 cup chopped fresh cilantro
  • 1/3 cup sour cream
  • 1/3 cup mayonnaise
  • 1 teaspoon minced garlic, about a clove
  • 1/2 teaspoon coarse salt
  • 1 tablespoon fresh lime juice
  • 1/4 teaspoon ground cumin
  • 2 tablespoons sugar or honey
  • Few shakes of your favorite hot sauce (optional)
  1. Add all the ingredients to the jar of your blender and blend until smooth. Store in a covered air-tight container in the fridge for up to a week (a mason jar works great for this!). Enjoy on everything.

GINGER SPICE MUFFINS
We really, really liked these.  A nice subtle flavor.  Made 12 muffins and a small loaf of bread.  Yum!  I added the flour and spices and sour cream all once..worked fine.  Took about 10 extra minutes to cook (used silicon muffin pans)

  • ½ cup (1 stick) butter, softened
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • 2 eggs
  • 1 cup canned pumpkin puree
  • 1½ teaspoons vanilla
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • ¼ teaspoon ground nutmeg
  • ½ cup sour cream
  • ¼ cup quick cooking oats for sprinkling on top


  1. Preheat the oven to 350°F and spray 18 muffin cups with nonstick baking spray, or line them with paper liners.
  2. In a large bowl or in the bowl of a stand mixer, beat butter, granulated sugar, and brown sugar on medium speed until light and fluffy. Add eggs one at a time, beating after each addition. Beat in the pumpkin puree and vanilla.
  3. In a medium bowl, combine flour, baking soda, salt, and spices.
  4. Add half of the dry ingredients to the mixer and beat on low just until combined. Beat in sour cream, again on low and just until combined. Finish by mixing in the remaining dry ingredients. Use a rubber spatula to scrape down the sides of the bowl and make sure everything is mixed in, but be careful not to over-beat.
  5. Divide the mixture evenly among the 18 muffin cups. Sprinkle a pinch of quick-cooking oats on each muffin.
  6. Bake at 350°F for 19-21 minutes, until the muffins are puffed and set, and a toothpick inserted in the center of a muffin comes out clean.
  7. Allow to cool slightly before serving.

CINNAMON CAKE

CINNAMON CAKE
We really liked this cake.  Had it with eggs and ham.  I also added cinnamon chips to the middle.  I only made 1/2 of the glaze.

  • 1 box yellow cake mix
  • 1 (5 oz) pkg instant vanilla pudding
  • 3 T. flour
  • 1 c. sour cream
  • ¼ c. oil
  • ¾ c water
  • 4 eggs
  • ½ c. sugar
  • 4 tsp. cinnamon
---cinnamon chips, optional

  • 1¼ powdered sugar
  • 4 Tbsp. milk
  • 1 tsp cinnamon

  1. HAND MIX THIS. Don't use an electric mixer!!!
  2. Mix together cake mix, pudding and flour.
  3. Add sour cream, oil and water.
  4. Add eggs last, one at a time.
  5. Blend well.
  6. Mix sugar and cinnamon in small bowl and set aside.
  7. Spray bundt pan well with cooking spray.
  8. Sprinkle ⅓ of cinnamon/sugar mix on bottom of pan.
  9. Next, pour ½ cake batter, spreading evenly over pan.
  10. Then sprinkle another ⅓ of the cinnamon/sugar (add cinnamon chips here) mix and the last ½ of cake batter.
  11. Finish with last ⅓ of cinnamon/sugar mix.
  12. Bake at 350 for 45-50 mins. (for the minis I only had to bake for 25 mins - so keep an eye until golden brown)

FOR GLAZE:
  1. Mix ingredients together and drizzle on cake

SWEET PORK BURRITOS & CILANTRO RANCH DRESSING

For my Mom & Dad's 50th Jill's family made these for dinner after the reunion.  We also had homemade ice cream.  It was so yummy!

Put following in a burrito - can do beans as well and of course cheese.

Sweet pork burritos:
3 lbs. pork loin
cup of salsa
cup of brown sugar

Cook on low all night in crock pot. Shred an hour before eating and add a little more brown sugar (against Jimmie's wishes :) and sprinkle with garlic salt.


Cilantro ranch dressing for burritos:

UPDATE: My family didn't like this as much as I thought they would - 1/2 recipe

3/4 cup mayo
3/4 cup sour cream
1/2 cup buttermilk
1 package of ranch dressing
bunch of cilantro (don't add too much and chop up little)
lime

DATE BARS

Date Bars
This is the recipe from Candace. She use to bring them to Pacific Yurts.  They are super yummy!
 
Filling:
 
3/4 cup firmly packed brown sugar
1 tablespoon cornstarch
1 1/2 cups chopped dates
1 1/2 cups sour cream (I use plain yogurt)
1 tsp maple extract (I use vanilla)
3 egg yolks
 
Base & Topping:
 
1 1/4 cups all purpose flour
2 cups quick oats
3/4 cup firmly packed brown sugar
1/2 tsp baking soda
3/4 cup margarine or butter, softened
 
Heat oven to 350.  Grease a 9 x 13 pan.  In med. saucepan  combine all filling ingredients.  Cook over med. heat until thickened slightly, stirring constantly.  Remove from heat and beat with a hand mixer for a few minutes to break up the dates a bit more.  It doesn't have to be completely smooth.  Set aside.
 
Mix all base & topping ingredients.  Reserve 1 1/2 cups for topping.  Press remaining oat mixture evenly in bottom of greased pan.  Add filling and spread evenly over base.  Then sprinkle remaining 1 1/2 cups over the top.  
 
Bake at 350 for about 30 minutes until top is a light golden brown.

WHITE CHILI

CREAMY WHITE CHILI
This is in the Lemon Cookbook pg 43.  It is one of our favorites. So good.  We have this every year at the yurts.  So good with cranberry bread, corn bread or pumpkin biscuits.  Double or triples really easy.

1# boneless skinless chicken breast, cut into 1/2" cubes
1 medium onion, chopped
1 1/2 tsp garlic powder or 1 clove garlic
1 T vegetable oil
2 cans (15 1/2 oz each) great northern beans, rinsed and drained, or Pinto & Piquettes
1 can (14 1/2 oz) chicken broth
2 cans (4 oz) chopped green chilies (my family likes 1 can)
1 tsp salt
1 tsp ground cumin
1 tsp dried oregano
1/2 tsp pepper
18 - 1/4 tsp cayenne pepper (or to taste)
1 cup (8 oz) sour cream (not light)
1/2 c whipping cream (1/2 works too)
---
cheddar cheese for on top of each serving
bacon crumbles, optional (Scott really likes this)

In a large saucepan, saute chicken, onion and garlic powder in oil until chicken is no longer pink.  Add beans, broth, chilies and seasonings.  Bring to a boil. Reduce heat; simmer uncovered for 30 minutes.  Remove from heat; stir in sour cream and cream.  Serve immediately.  Sprinkle cheddar cheese on top of individual servings.  Yield: 7 servings 

WHITE CHICKEN CHILI
This won the chili cook off in our ward October 2016.  Got the recipe from The Hickens.  Was super yummy!

1/2 - 1 yellow onion
2 - 4 cloves garlic
2 chicken breast or thighs
30 oz great northern beans
15 oz diced tomatoes with green chilies (just did regular without green chilies)
4 oz green chilies
1 1/2 cups chicken stock
8 oz cream cheese
1 T oregano leaves
2 tsp ground cumin
2 tsp chili powder
1 tsp smoked paprika
1 tsp kosher salt
1/2 tsp black pepper
chopped cilantro
shredded cheese
corn tortilla chips

Layer onion, garlic, chicken, beans, tomatoes, green chilies, chicken stock, cream cheese and spices in crock pot.  Cook on low for 8 hours.  Top with cilantro, shredded cheese and tortilla chips.

DILL DIP

DILL DIP
This came from Lisa's neighbor.  It is one of Javan's favorite dips.  I loved it!  We had it on Ruffles.  I was so surprised when I saw the recipe and that it has horseradish in it.  I wouldn't have ever guessed that.  So good!

1 pt sour cream (not light)
3/4 pt mayo (Best Foods - not light)
6 small dill pickles (or relish) & juice - chopped up fine w/garlic onion @ bottom
2 heaping Tablespoons of horseradish (start with 1 T to taste)

Set overnight after stirring for 1 hour.

This was really good.  Scott especially liked.  Next time I would make with nuts.
I did the Cider Glaze with cinnamon mixture sprinkled on top of each individual piece.  Just used some fresh apple cider I had on hand.

4 medium sized fresh pears, peeled, cored and grated or about 2 cups
3 cups all-purpose flour
1/2 cup white granulated sugar
1/2 cup brown sugar
1 teaspoon baking soda
1/4 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon ground nutmeg
1 teaspoon ground cinnamon
1/4 teaspoon ground cloves
12 tablespoons butter or 3/4 cup, melted
1/2 cup sour cream
1/2 cup buttermilk
3 eggs
1 teaspoon vanilla extract
1 cup chopped nuts, walnuts or pecans, Optional
TOPPING
1 cup powdered sugar
4 or 5 tablespoons milk
1 teaspoon vanilla extract
Whisk together flour, white sugar, brown sugar, baking soda, baking powder, salt, nutmeg, cinnamon and cloves in a large mixing bowl until well mixed.  Add melted butter, sour cream, buttermilk, eggs,  vanilla extract and pears stirring with a spoon to mix well.  Fold in nuts.  Pour into a well sprayed 10 inch bundt pan.  Bake in preheated 350 degree oven 60 to 70 minutes checking to make sure cake is done on the inside.  Cool for 20 to 25 minutes and remove from pan. Let cool.  Combine the topping ingredients mixing well and drizzle over cake.  Enjoy!
Note:  You can frost this cake with cream cheese frosting or even caramel frosting would be good if you don’t want to use the powdered sugar topping.  It would also be good just sprinkled with powdered sugar. I have posted the cream cheese frosting and caramel frosting recipes below for your convenience.

For the Cider Glaze:
  • 1/4 cup butter
  • 1/4 cup sugar
  • 1/8 cup water
  • 1/8 – 1/4 cup hard cider *(see below for substitutions)
For the Cinnamon Sugar Coating:
  • 6 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg

While cake is baking, prepare Cider Glaze. Melt butter, sugar and water over medium high heat. Bring mixture to a boil and let boil for 1-2 minutes. Remove from heat and immediately add the cider, stirring to combine.
Place baking sheet under wire rack. Using a pastry brush or marinate brush, cover cake with glaze. I usually do this in several passes, letting one application of glaze sink in and then going back over the cake with another.
Prepare the Cinnamon Sugar Coating. Combine sugar, cinnamon, and nutmeg in a small bowl. Sprinkle the warm, glazed cake with cinnamon sugar, using fingers to rub it onto the sides of the cake. (I usually place my cinnamon sugar mixture in an empty spice bottle, or salt shaker and then sprinkle it over the cake.)

TACO BELL CRUNCHWRAP SUPREME
We all really liked these.  Fun to make.  Kids can easily help (kinda like an assembly line).  We have made them twice once with beef and once with beans.  Would like to try chicken.  I like to do 1/2 of a tostada shell, it makes it easier to wrap.  Want to try the baja sauce.  Found a recipe on pinterest for it.  Still need to try it.  This would be fun to have with the missionaries or take to someone.

1 pound ground beef (refried beans good too)
1 packet taco seasoning mix
3/4 cup water
1 can nacho cheese (I have only used real cheese)
8 burrito-size flour tortillas
6 tostada shells (if you only use 1/2 - 3/4 it is easier to wap)
1 cup sour cream
2 cups lettuce, shredded
1 cup tomato, diced
1 cup Mexican cheese blend
Cooking spray (I used oil)

  
In a large skillet over medium-high heat, cook and crumble the ground beef until cooked through. Drain excess grease, and stir in the taco seasoning mix and water. Cook according to the package directions. 

Warm the nacho cheese sauce in a microwave-safe bowl. Place the flour tortillas on a large plate and microwave for 20 seconds to warm them. 

Lay 1 flour tortilla on a flat surface. Spread 1/2 cup of taco meat in the center of the tortilla, about 6 inches across. Drizzle with nacho cheese sauce, and top with 1 tostada shell or crispy corn tortilla. Spread a thin layer of sour cream over the tostada shell, and top with lettuce, tomato, and shredded Mexican cheese. 

To fold the crunch wrap, start at the bottom of the flour tortilla and fold the edge up and over the center. Continue to work your way around, folding the tortilla up and over the center fillings. If there is an open spot left in the center, cut a piece from an extra flour tortilla and tuck it underneath so the fillings are completely covered. 

Spray a large nonstick skillet with cooking spray, and heat to a medium heat. Place the crunch wrap seam-side down, and cook for 2-3 minutes or until the tortilla is golden brown. Carefully flip the crunch wrap over, and cook the other side until it is golden brown. Serve immediately. 

BAJA SAUCE

place in a blender or food processor:
1/4 or a red bell pepper
1 small jalapeno seeded, chopped
2 T diced onion

Mix:
6 tsp above mixture
1/2 c mayo
1/2 c sour cream
1 T vinegar
1/4 tsp pepper, garlic powder & cumin

SIT OVERNIGHT - VERY IMPORTANT!

These are seriously the best scones ever!  I might even like them better the pumpkin ones.  Kylan was over and had one - he even liked them.

2 cups plus 2 T flour
  • ⅓ cup brown sugar
  • 1 Tbsp baking powder
  • ½ tsp salt
  • ½ cup unsalted butter, cubed and cold
  • 1 egg
  • ¼ cup heavy whipping cream, plus more for brushing
  • ¼ cup sour cream
  • 2 tsp vanilla extract
  • ½ cup fresh peaches, diced

Vanilla Glaze

  • ½ cup powdered sugar
  • 1 Tbsp vanilla extract
  • 1-3 Tbsp heavy whipping cream

Instructions

  1. Preheat oven to 400 degrees. Line a baking sheet with parchment paper.
  2. In a bowl, mix together flour, brown sugar, baking powder, and salt. Once combined, cut in the butter with a fork or pastry cutter until the mixture resembles coarse crumbs.
  3. Whisk together heavy cream, sour cream, egg, and vanilla extract. Slowly add the wet ingredients into the dry ingredients, and mix until just combined.
  4. Stir in the peaches, and mix until just combined.
  5. On a well-floured surface, turn out the scone dough and pat into a small disk that's about a ½" thick. Cut into 6-8 slices, and transfer to the baking sheet. Brush each scone with just a bit of heavy cream.
  6. Bake for 16-18 minutes, or just until golden brown. Allow to cool.

Glaze

  1. Whisk together powdered sugar, vanilla extract, and 1 Tbsp of heavy cream. If the glaze is too thick, continue adding in heavy cream, one 1 Tbsp at a time, until it has reached the desired consistency. Pour over warm scones and enjoy!

CAULIFLOWER AU GRATIN

This was given to me from Judi (Grandma Nelson).

1 medium head of cauliflower
1 cup sour cream
1 cup grated sharp cheddar cheese
1 tsp toasted sesame seeds
salt and pepper, to taste

Preheat oven to 350 degrees.  Separate cauliflower into flowerets.  Cook in small amount of boiling salted water 10-12 minutes or until tender (I probably wouldn't add the salt).  Drain.  Place half of the cauliflower in a 1 1/2 quart casserole. Season with salt and pepper.  Spread half of sour cream, half of cheese and half of sesame seeds over cauliflower.  Repeat layers.  Bake 15 minutes or until cheese melts.

SEVEN LAYER DIP

Easy to make.  I used guac dip instead of avocados.  My kids didn't really eat but I think it was because they weren't really hungry.

Layer in a 9x13:
2 can black beans refried beans
2 ripe avocados mixed with 1 tsp garlic powder
8 oz sour cream mixed with 1/4 c mayo and 1-2 T taco seasoning
shredded cheese (used mexican), tomatoes or 1/4 c Rotel, sliced olives and sliced green onions

BREAKFAST BUNDT CAKE

We liked this.  Scott wouldn't try it because he thought it was weird with the blueberries.  I told him fine..more for us :-)  It taste like a doughnut.  We  liked it better cold.  Kept in fridge.

1 box white cake mix
4 eggs
2/3 cup melted butter, cooled
¾ cup buttermilk or milk
1 cup sour cream or plain yogurt
2 teaspoon vanilla extract
1 tablespoon cinnamon
1 3.4- to 3.9-oz. pkg. vanilla or white chocolate instant pudding mix
1 ½ cups blueberries

Maple Glaze

2 cups powdered sugar
2 tablespoons butter, melted
1 teaspoon maple flavoring
2–4 tablespoons milk
Decoration
5 pieces of bacon, cooked and chopped for decoration


1.   Preheat oven to 350 degrees and grease a Bundt pan.

2.   Sift cake mix into a small bowl to remove any lumps; set aside.

3.   In a large bowl, combine eggs, butter, buttermilk, sour cream, and vanilla extract.

4.   Add cake mix, cinnamon, and instant pudding mix; stir until combined.

5.   Fold in blueberries.

6.   Dump batter into prepared Bundt pan and spread evenly.

7.   Bake for 38–50 minutes or until a knife inserted near the center comes out clean.

8.   Let cool in pan, then turn out.

9.   Maple Glaze: Whisk powdered sugar, butter, maple flavoring, and 2 tablespoons milk together until smooth. If too thick to pour, add more milk.

10.  Pour glaze over cooled cake and top with chopped bacon.

ANDES MINT CAKE

Loved!  Yum!  This is such a moist cake. Was still good days afterwards.  Needs ice cream or a glass of milk with all that mint.  Made for my bday 2016.  Didn't put the mints around the bottom - only on top. Can get the mints in the bulk at WinCo but still pretty spendy.  I halved the green minty cream filling.

Chocolate CakeChocolate Andes Mint Cake: Make It with a Cake Mix!
1 box devil’s food cake mix
3 eggs
½ cup oil
¾ cup buttermilk or milk
¾ cup sour cream
2 teaspoons vanilla extract
Green Minty Cream Filling
1 ¼ cup butter, softened
1 ½ teaspoons peppermint extract
2 tablespoons milk
4–5 cups powdered sugar
Green food dye (optional)
Chocolate Mint Buttercream
1 ¼ cup butter, softened
½ cup unsweetened cocoa powder
1 ½ teaspoon peppermint extract
2 tablespoon milk or sour cream
3–4 cups powdered sugar
Chocolate Ganache
¾ cup chocolate chips
½ cup heavy whipping cream
Decoration
Andes mints for decoration

1.  Preheat oven to 350 degrees and grease three 8-inch pans. (You can also use only two pans; see baking time below.) I prefer to line the bottoms of my pans with foil or parchment paper for easy removal.
2.   Sift cake mix into a small bowl; set aside.
3.   In a large bowl, whisk eggs, oil, buttermilk, sour cream, and vanilla extract until smooth.
4.   Stir in cake mix.
5.   Pour equal amount of batter into each prepared pan and use a spatula to spread evenly. Bake for 17–22 minutes or until a knife inserted near the center comes out clean. (If you are making only two layers, the cake will need to bake for 20–25 minutes.)
6.   Let cake cool completely.
7.   Green Minty Cream Filling: Beat butter for 2 minutes. Add peppermint extract and milk and beat again. Gradually add powdered sugar until the filling reaches the desired consistency.
8.   Chocolate Mint Buttercream: Beat butter for 2 minutes. Add cocoa powder, peppermint extract, and milk; beat again. Gradually add powdered sugar until the buttercream reaches the desired consistency.
9.   Chocolate Ganache: In a microwave-safe bowl, combine chocolate chips and heavy whipping cream. Microwave for 30 seconds. Stir. Continue to microwave in 10-second increments until smooth.
10.  To assemble the cake, place one layer of chocolate cake on a cake stand; frost with the Green Minty Cream Filling. Top with a second layer of cake; frost with the rest of the filling. Top with the last layer of cake; frost the top and sides with Chocolate Mint Buttercream.
11.   Use Andes mint candies to decorate the bottom of the cake.
12.   Pour the Chocolate Ganache carefully over the top of the cake and let it drip down the sides. Finish with chopped Andes mints on top.

FAJITAS

FAJITAS
These were very easy and so tasty!  I got the peppers from Costco (red, yellow and orange).

3 peppers (any color), cut up (I used yellow, orange and red)
1 onion
2# chicken
2 T taco seasoning
4 garlic cloves
1-2 limes (I used lime juice)
1 can diced tomatoes
----
tortillas
cut up tomatoes, optional
sour cream
guac (got the individual ones from Costco)
cheese

In crock pot layer half of the cut up peppers and half of the onion.  Add 2# of chicken and sprinkle with 1 T of taco seasoning.  Turn chicken over and sprinkle with 1 T of taco seasoning.  Add four garlic cloves, lime juice and diced tomatoes.  

Cook on high for 3 hours.

Remove chicken and slice or shred.  Return chicken and mix.  Heat up tortillas.  Top with chicken/pepper mixture and add any toppings.

CHOCOLATE PEPPERMINT BUNDT CAKE
Loved, loved this!  Wanted all Christmas season to make it.  Ended up making it the night of Alamo Bowl (Ducks January 2, 2016).  We were having a party at Lisa & Kyle's.  Mom & Dad and Justin's family were all there.  It was so good wish I would have made it just for our family so we would have had left overs :-)

Chocolate Peppermint Bundt Cake Recipe
Ingredients
  • cocoa powder and butter for pan
  • 1 box Duncan Hines Devil's Food Cake Mix
  • 1 small box instant chocolate pudding mix (3.9 ounces)
  • 4 eggs
  • 1 cup full fat sour cream
  • 1 cup vegetable oil
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon certified pure peppermint essential oil or 2 teaspoons peppermint extract
  • 1 cup dark chocolate chips, roughly chopped
  • Glaze
  • 1/2 cup dark chocolate chips (3 1/2 ounces)
  • 1/2 tablespoon butter (not sure this is needed - was runnier than normal)
  • 1/2 cup heavy cream
  • 1 to 2 drops certified pure peppermint essential oil or 1/2 teaspoon peppermint extract
  • 2 candy canes, crushed
Instructions
  1. Preheat oven to 350 degrees. Thoroughly butter the inside of a bundt pan, then dust to coat with cocoa powder. Tap and shake out excess powder.
  2. Dump the dry cake mix and dry pudding mix into the bowl of a stand mixer. In a medium bowl, whisk together the eggs, sour cream, oil, milk, vanilla, and peppermint until smooth. With the stand mixer running, add the liquid ingredients to the dry mixes and beat until combined. Scrape down sides of bowl and beat for 2 minutes on medium high speed. Add chocolate chips and stir until combined. Pour batter into prepared bundt pan and bake for 45-55 minutes, until an inserted skewer comes out with moist crumbs attached.
  3. For the glaze, place the chocolate chips and butter in a bowl. Heat the cream until hot and bubbly, then pour it over the chocolate chips. Let sit for a few minutes while the chocolate melts, then add the peppermint and whisk until smooth. Set aside.
  4. When the cake is done baking, let cool until just warm, about 15-20 minutes. Then invert onto a paper towel on a cooling rack. Let cool completely, then place on a serving platter. Glaze the cake by gently brushing glaze over the top, then spoon or pour glaze over and let it drip down the sides. If the glaze has thickened too much, heat for a few seconds to loosen. Let glaze set on the cake for a few minutes, then sprinkle with crushed candy canes.
  5. Serve with whipped cream or vanilla ice cream.

PUMPKIN CHEESECAKE PIE WITH GINGERSNAP CRUST
Yum!

1/2 c pecans
2 T sugar
1 cup gingersnap crumbs (approx 20 cookies)
5 T unsalted butter (melted)
1# cream cheese (room temp)
2/3 c brown sugar (packed)
1/2 c sour cream (room temp)
1 c canned solid-pack pumpkin
3 eggs (room temp)
1 tsp found cinnamon
pinch of ground cloves
pine of ground ginger
Pecan halves, for garnish

Preheat oven to 325.  In food processor, combine pecans and sugar until finely chopped about 20 seconds.  Pour into large bowl, add gingersnaps crumbs and mix.  Pour in butter and stir well to combine.  Turn mixture into 10" pie dish (or springfoam) and press evenly against bottom and sides to form crust.  Bake for 10 minutes.  Set aside to cool. 
*leave oven on*
In large bowl, beat cream cheese and brown sugar until soft and well blended.  Stir in sour cream and pumpkin.  Gradually beat in eggs, one at a time, add cinnamon, cloves and ginger.  Place pie dish on baking sheet and pour in filling.  Bake in middle of oven for 45 minutes or until filling is set.  Let cool on rack.  Arrange pecan halves around edge of pie.

Harold Hocker (Pacific Yurts) gave me this recipe. We really liked it.  Used it to cook some Bass he had given me.

Sliced onions on bottom of pan

Place fish fillets

Mix together and put on top of fish:
1/2 cup sour cream
1/3 cup butter
2 T lemon juice

Sprinkle with cheese

Bake at 350 for 30-40 minutes

CAROLE PATON'S EGG CASSEROLE
This in the McCleve cookbook pg 8.  Got recipe from Candace (Pacific Yurts).  So good!  Goes really good with a meat and some kind of bread (usually do zucchini or banana).

Butter a 9 x 13.  Layer a can of diced green chilies (sometimes  do two cans).  Cover with 1# grated jack cheese (any cheese will work).  Beat  1 dozen (or more) eggs.  Add 16 oz sour cream and beat.  Pour over cheese and chilies.  Bake 350 degrees 30-40 minutes.  

Serve with any of the following:
salsa
chopped tomatoes
chopped green onions
chopped cilantro

CHERRY PIE FILLING JELL-O SALAD
One of Grandpa Maner’s (Buster) favorite salads.  Goes good with just about anything. Found in McCleve cookbook pg. 49.

Dissolve 1 large package red Jell-o in 2 cups boiling water.

Add: (I use big cans)
1 can cherry pie filling (good with 2 cups frozen fruit as a substitute)
1 can crushed pineapple (don’t need to drain)

Tip:  When pouring into 9x13, pour slowly.  Or get a big spoon and scoop it into dish until big pieces are gone.

Topping:
1 (8 oz) pkg cream cheese, softened
½ cup sugar
½ cup sour cream
1 tsp vanilla

Beat until smooth.  Spread over top of Jell-o mixture before serving.  For a variation try Blueberry pie filling/berry Jell-o.
