CHOCOLATE BLACK BEAN SMOOTHIE

CHOCOLATE BLACK BEAN SMOOTHIE
You would never know there are black beans in here. So good. Even Abagail would drink some of it.

I doubled the recipe.  We all had plenty with some leftover.  I added cooked oatmeal to the leftovers and added some more spinach for breakfast the  next day.  Yum!  I think pumpkin would be a really good addition to this as well.

Put all the ingredients in a blender

1 frozen banana
1 cup frozen cauliflower (you can use fresh but it might not completely blend up as well) - I used spinach because I didn't have any frozen cauliflower
1/2 cup black beans
1-2 medjool dates, pitted (didn't have any on hand so used some blue agave maybe 1 T)
1 cup almond of other plant based milk
1 T hemp seeds or flax seed meal or chia seeds
1 T cocoa powder (I used dark)
1 tsp or less of cinnamon

Can sprinkle cocoa nibs over the top if desired.  Could also top with dairy free spray whip as well but not necessary.

HORCHATA

HORCHATA

We liked.  Next time either don't blend as much or double strain.

1 1/3 cup uncooked long-grain white rice
2 cinnamon sticks
4 cups water, divided
1 1/2 cups milk
2 tsp vanilla
2 tsp cinnamon
1/3 - 1/2 cup sugar

To a blender add rice, 2 cups of water and 2 cinnamon sticks. Blend for about 2 minute or until the rice and cinnamon sticks are roughly ground.  Add the remaining water and blend again.  Pour contents into a pitcher or container with a fitted lid and place on your countertop overnight or for at least 8 hours.

Pour the rice mixture into a fine mesh strainer, into a pitcher.  Discard the rice.  Stir in the milk, vanilla, cinnamon, and sugar (to your preference).  Chill until ready to serve.  Stir well before serving and serve over ice.

GINGER SPICE MUFFINS

https://luluthebaker.com/2017/10/ginger-spice-pumpkin-muffins/

GINGER SPICE MUFFINS
We really, really liked these.  A nice subtle flavor.  Made 12 muffins and a small loaf of bread.  Yum!  I added the flour and spices and sour cream all once..worked fine.  Took about 10 extra minutes to cook (used silicon muffin pans)

  • ½ cup (1 stick) butter, softened
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • 2 eggs
  • 1 cup canned pumpkin puree
  • 1½ teaspoons vanilla
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • ¼ teaspoon ground nutmeg
  • ½ cup sour cream
  • ¼ cup quick cooking oats for sprinkling on top

  1. Preheat the oven to 350°F and spray 18 muffin cups with nonstick baking spray, or line them with paper liners.
  2. In a large bowl or in the bowl of a stand mixer, beat butter, granulated sugar, and brown sugar on medium speed until light and fluffy. Add eggs one at a time, beating after each addition. Beat in the pumpkin puree and vanilla.
  3. In a medium bowl, combine flour, baking soda, salt, and spices.
  4. Add half of the dry ingredients to the mixer and beat on low just until combined. Beat in sour cream, again on low and just until combined. Finish by mixing in the remaining dry ingredients. Use a rubber spatula to scrape down the sides of the bowl and make sure everything is mixed in, but be careful not to over-beat.
  5. Divide the mixture evenly among the 18 muffin cups. Sprinkle a pinch of quick-cooking oats on each muffin.
  6. Bake at 350°F for 19-21 minutes, until the muffins are puffed and set, and a toothpick inserted in the center of a muffin comes out clean.
  7. Allow to cool slightly before serving.

PUMPKIN CINNAMON STREUSEL PANCAKES

PUMPKIN CINNAMON STREUSEL PANCAKES
Everyone loved!  Perfect fall dinner!  Could easily half the streusel amount.  Good without streusel on both sides.

STREUSEL (can 1/2 this amount)

  • 1/2 cup all-purpose flour (about 2 ounces)
  • 1/2 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 6 tablespoons cold unsalted butter, cut into chunks

PANCAKES:

  • 3/4 cup all-purpose flour (about 3 ounces)
  • 1/2 cup whole wheat flour (about 2 ounces)
  • 2 tablespoons brown sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/8 teaspoon ground ginger
  • 1/8 teaspoon ground cloves
  • 1 cup milk
  • 1/2 cup canned pure pumpkin puree
  • 1 large egg
  • 2 tablespoons vegetable oil
  • 1 teaspoon vanilla

  1. Start by making the cinnamon streusel. In a medium bowl, mix together the flour, brown sugar, cinnamon, and butter. Use your hands or a fork to mix until you have a crumbly mixture.
  2. In a large bowl, whisk together the flours, brown sugar, baking powder, salt, cinnamon, nutmeg, ginger, and cloves. Set aside.
  3. In a medium bowl or large measuring cup, whisk together the milk, egg, pumpkin, oil, and vanilla. Add the wet ingredients to the flour mixture and whisk until combined.
  4. Heat the griddle or pan to medium low and coat with cooking spray. Pour a 1/3 cup of batter onto the heated griddle. Sprinkle about 1 tablespoon of the streusel over the pancake. Cook on the first side until bubbles begin to appear, about 3 minutes, or until golden brown. Gently flip the pancake over and cover the top with the streusel. Cook for another 3 minutes or so. Continue with the rest of the pancake batter.
  5. Serve pancakes warm with maple syrup drizzled over top. Enjoy!

MOIST GINGERBREAD SPICE SNACK CAKE

My family really liked this cake.  I didn't like it as much as I thought I would.  It did seem to get better after a couple of days.  Notice - everything needs to be room temperature.

https://sallysbakingaddiction.com/2015/12/23/moist-gingerbread-spice-snack-cake/

MOIST GINGERBREAD SPICE SNACK CAKE

  • 2 cups (250g) all-purpose flour (spoon & leveled)
  • 1 teaspoon baking soda
  • 1 and 1/2 teaspoons ground ginger
  • 1 and 1/2 teaspoons ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon salt
  • 3/4 cup (180ml) unsulphured molasses (I use Grandma's Molasses brand)
  • 3/4 cup (180ml) hot water (about 100°F (38°C))
  • 1/2 cup (115g; 1 stick) unsalted butter, softened to room temperature
  • 1/3 cup (67g) packed light or dark brown sugar
  • 1 large egg, at room temperature
  • 1 teaspoon pure vanilla extract
CREAM CHEESE FROSTING (optional)

  • 8 oz (224g) full-fat brick style cream cheese, softened to room temperature
  • 2 Tablespoons (30g) unsalted butter, softened to room temperature
  • 1 and 3/4 cups (210g) confectioners' sugar
  • 1 Tablespoon (15ml) cream or milk
  • 1 teaspoon vanilla extract
  • optional: 1/2 teaspoon maple extract or 2 Tablespoons (30ml) pure maple syrup
  • optional: cranberries for garnish
  1. Adjust the oven rack to the lower third position and preheat oven to 350°F (177°C). Grease a 9-inch springform pan. Set aside.
  2. In a medium bowl, whisk the flour, baking soda, ginger, cinnamon, cloves, and salt together until combined. Set aside. In a separate bowl or dish, whisk the molasses and hot water together.
  3. In a large bowl using a handheld or stand mixer fitted with a paddle attachment, beat the butter on high speed until smooth and creamy - about 1 minute. Add the brown sugar and beat on high speed for 1 minute until creamed together fairly well. Scrape down the sides and up the bottom of the bowl with a rubber spatula as needed. On medium-high speed, beat in the egg and vanilla until combined. Scrape down the sides and up the bottom of the bowl with a rubber spatula as needed. With the mixer on low speed, add the dry ingredients in three additions alternating with the hot water/molasses, beginning and ending with the dry ingredients, and mixing each addition just until incorporated. Avoid overmixing. Batter will be thin. Whisk out any big lumps.
  4. Pour batter into prepared pan. Bake for around 35 minutes or until the cake is baked through. All ovens are different and your cake could take a little more or less time. To test for doneness, insert a toothpick into the center of the cake. If it comes out clean with only a couple moist (not wet) crumbs, it is done. Allow cake to cool completely in the pan set on a wire rack. The cake must be completely cool before frosting.
  5. Make the frosting: In a large bowl using a hand-held mixer or stand mixer fitted with a whisk or paddle attachment, beat the cream cheese and butter together on medium-high speed until creamy and no lumps remain- about 2 minutes. Add confectioners' sugar, milk, and vanilla extract. Beat on low speed for 20 seconds then increase to high speed until everything is completely combined and the frosting is creamy. Taste. Add a pinch of salt if frosting is too sweet. Spread on top of cake. Spread around the sides if you have extra frosting.
  6. Slice, serve, enjoy! Leftover frosted cake keeps well covered tightly in the refrigerator for up to 5 days. The flavor gets even better after a day or two.

Make ahead tip: The cake can be baked, cooled, and covered tightly at room temperature overnight. Likewise, the frosting can be prepared then covered and refrigerated overnight. Assemble and frost the cake the next day when you are ready to serve. Frosted or unfrosted cake can be frozen up to 2 months. Thaw overnight in the refrigerator and bring to room temperature before serving. Honestly, it tastes much better fresh!

AMISH CINNAMON BREAD

AMISH CINNAMON BREAD (OR MENNONITE LADY)
Saw this on facebook.  Had to try it.  I love cinnamon!  It is so good.  Not good for you...holy cow tons of sugar.  I halved the recipe and made muffins.  Makes 12.  Baked for 25 minutes.  Very easy to make.  Had egg room temp as well as margarine.  Recipe calls for butter but used margarine because it softens faster.  I used the bosch beaters for the whole recipe.

1 cup butter, softened
2 cups sugar
2 eggs - room temp
2 cups buttermilk
4 cups flour
2 tsp baking soda

cinnamon/sugar mixture:
2/3 cup sugar
2 tsp cinnamon

Cream together butter, sugar and eggs.  Add milk, flour and baking soda.

Put half the batter in greased loaf pans (1/4 of batter in each pan).

Sprinkle some of cinnamon sugar mixture over batter.

Top with last of batter.  Then rest of cinnamon sugar.

Use a knife to swirl.

Bake at 350 for 45-50 minutes or 20-25 minutes for muffins.

Let cool 20 minutes before removing from pan.

APPLE DIP

APPLE DIP
This is found in the 2nd McCleve pg 19.  Nancy Barnes called me one day asking about this recipe.  Lisa use to bring it to YW when they worked together. The girls always really liked it.  I had some butterscotch chips I needed to use.  We loved it!  Wow!  So easy to make and taste great!

1 can Eagle Brand milk (sweetened condensed)
2 tsp apple cider vinegar
1 cup butterscotch chips (Guittard is the best!)
1/2 tsp cinnamon

Heat in microwave for 50 seconds.  Stir.  Heat for 50 seconds more until smooth.  Serve with sliced apples.  Would be good with bananas, grapes, pound cake or crackers as well.

PEAR SAUCE

PEAR SAUCE
This is really good.  I doubled the recipe. Kept it chunky.  Kids really liked.  Wasn't very sweet could add sugar if you wanted start with 1/4 cup cup brown sugar.  It smelled so so good when cooking.  We had with graham crackers.

yield: ABOUT 4 CUPS

prep time: 5 MINUTES

cook time: 30 MINUTES

total time: 35 MINUTES

INGREDIENTS:

8-10 pears; peeled, cored, and cut into 1-inch pieces (I use Bartlett)
1/4 cup water
2 teaspoons fresh lemon juice
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon vanilla extract

DIRECTIONS:

1. Combine pears, water, lemon juice, cinnamon, ginger, and vanilla in a large saucepan. Bring to a boil over high heat. Reduce heat to medium-low and simmer, stirring occasionally, until pears have softened, about 25-30 minutes.
2. Use an immersion blender to process the pear sauce until smooth. If you prefer a chunky pear sauce, mash with a potato masher. You can also transfer the cooked pear mixture to a food processor or blender to process, just make sure the pear sauce has cooled down.
3. Once the pear sauce has cooled down, pour into glass or plastic containers. Cover and store in the refrigerator. The pear sauce will keep in the fridge for one week. You can also freeze or can the pear sauce.

MAPLE CINNAMON ROLLS

http://sallysbakingaddiction.com/2015/09/24/melt-in-your-mouth-maple-cinnamon-rolls/

MAPLE CINNAMON ROLLS
Made this for October 2016 General Conference.  I loved being able to make the day before then just cook on Sunday.  I was wanting to try Brown Sugar Caramel Frosting so that is what I put on top.  Yum!  Everyone loved them!  I loved the dough.  I was surprised the butter did finally mix in.

Ingredients:

DOUGH

  • 1 cup (240ml) whole milk1
  • 2/3 cup (135g) granulated sugar
  • 1 and 1/2 tablespoons (14g) Red Star Platinum yeast (2 standard size packets)2
  • 1/2 cup (115g) unsalted butter, softened to room temperature and cut into 4 pieces
  • 2 large eggs, at room temperature
  • 1/2 teaspoon salt
  • 4 and 1/2 cups (558g) all-purpose flour, plus more for dusting/rolling

FILLING

  • 1/2 cup (115g) unsalted butter, softened to room temperature
  • 1/4 cup (60ml) pure maple syrup
  • 1/4 cup (50g) granulated sugar
  • 1 Tablespoon ground cinnamon

MAPLE ICING

  • 1 and 1/2 cups (180g) confectioners' sugar
  • 2 Tablespoons (30ml) pure maple syrup
  • 2 Tablespoons (30ml) whole milk

Directions:

  1. Make The Dough: In a small saucepan, warm the milk over low heat until lukewarm-- no need to use a thermometer, but to be precise: about 95°F (35°C). Pour the warm milk into the bowl of a stand electric mixer fitted with the dough hook attachment (OR you can use a handheld mixer OR no mixer, but a stand mixer is ideal). With a spoon, manually stir in the sugar and yeast. Cover with a towel and let sit until the yeast is foamy, about 5-10 minutes. This is called proofing your yeast. If the yeast does not dissolve and foam, start over with fresh active yeast. On low speed, beat in the softened butter until it is slightly broken up. Next add the eggs, one at a time, and then the salt. The butter won't really be mixing into the mixture, so don't be alarmed if it stays in pieces. On low speed, gradually add the flour. Once it is all added, beat on medium speed until a soft dough forms. Increase speed to medium-high and beat until the dough is soft and supple, about 6 minutes longer. *If you do not have a stand-mixer with a hook attachment, knead the dough by hand in this step.
  2. Transfer the dough to a lightly floured surface and knead it with your hands for 1 minute. Form the dough into a ball and transfer it to a lightly greased bowl. Cover the dough loosely with plastic wrap, a paper towel, or aluminum foil and let sit in a warm place until doubled in size, about 1 to 2 hours. Here's what I do: turn the oven on to 250°F (121°C). Turn the oven off. Stick the covered dough inside the oven and allow it to rise in this warm environment.
  1. Butter/grease/spray with nonstick spray the bottom of a 9x13 inch baking dish, then line with parchment paper. Turn the dough out onto a lightly floured work surface and, using a rolling pin, roll into a 13x18 inch rectangle. I used a ruler for accuracy. Make sure the dough is smooth and evenly thick, even at the corners.
  2. For The Filling: Using a handheld or stand mixer fitted with a paddle or whisk attachment, beat the butter and maple syrup together on medium-high speed until combined and creamy. Add the sugar and cinnamon, beating until combined. Spread the maple mixture all over the dough. Tightly roll up the dough to form an 18-inch-long log. Cut into 12 even rolls (about 1.5 inches in width each). Arrange them in the prepared baking pan, cut sides up. Cover the rolls very tightly with aluminum foil (no rolls exposed, please-- this dries out your dough) and stick in the refrigerator for 8-12 hours.3
  3. Remove rolls from the refrigerator and let rise in a warm place just as you did in step 2 until they are puffy, about 1-2 hours. Mine usually take 1 and 1/2 hours.
  4. After the rolls have risen, preheat the oven to 375°F (191°C). Bake for about 25 minutes, until they are golden brown. About halfway through the bake time, I like to cover the rolls loosely with aluminum foil so the tops don't brown too much. Remove pan from the oven and allow to cool on a wire rack for about 10 minutes as you make the icing.
  5. Make The Icing: Whisk all of the icing ingredients together. If it's too thin, add a little more confectioners' sugar. Drizzle icing over warm rolls. Cover leftover frosted or unfrosted rolls tightly and store at room temperature for up to 3 days-- I prefer this over storing in the refrigerator. I find that dries them out, but do what you like best.
  6. Make ahead tip: Baked rolls can be frozen up to 2 months. Thaw overnight in the refrigerator and warm up before enjoying. You can also freeze the unbaked rolls and here's how: let the rolls rise overnight through step 4, then the next morning do step 5. Then, bake the rolls for only about 10 minutes at 375°F (191°C). Cool completely, then cover tightly and freeze. Take the rolls out of the freezer and put into the refrigerator a few hours before serving. Then, finish baking them.
  1. Whole milk preferred for richest tasting dough. 2% or 1% would be fine, but not ideal. Nonfat is not recommended.
  2. If not using an instant yeast, rise time may be up to 40% longer.
  3. No time for overnight? If planning to bake the rolls right away, in step 4-- instead of sticking the rolls in the refrigerator, loosely cover them and let rise in a warm place just as you did in step 2 until they are puffy, about 2 hours. Then continue with step 6.

GERMAN APPLE CAKE

http://ourbestbites.com/2016/09/german-apple-cake/

GERMAN APPLE CAKE
I saw this recipe and wanted to make it because I had apples that needed to be used.  We had 1/2  a box with Lisa (from Sister Richardson) and they were starting to go bad.  We had LOVED this box of apples.  They were yellow and so sweet.  Then I was asked to take a meal into someone so decided to make it since I would be giving 1/2 of it away.  It was SUPER TASTY!  Scott especially liked it.  We had it with cool whip (just plain is good too).  Did not top with caramel.

Ingredients
  1. 2 large eggs
  2. 1 cup vegetable oil
  3. 2 cups white sugar
  4. 2 teaspoons ground cinnamon
  5. 1/2 teaspoons salt
  6. 1 teaspoon vanilla extract
  7. 2 cups flour
  8. 1 teaspoon baking soda
  9. 4 cups peeled, diced apples (I suggest Granny Smith's)
  10. optional but recommended: vanilla ice cream or whipped cream for serving.
Instructions
  1. Preheat oven to 350 degrees. Spray a 9x13 pan with non-stick spray.
  2. In a mixing bowl, beat oil and eggs with an electric mixer. Add sugar and vanilla and beat well. Combine flour, salt, baking soda, and ground cinnamon together in a bowl. Slowly add flour mixture to egg mixture and mix until combined. Teh batter will be thick. Mix in apples until just combined.
  3. Spread batter in prepared pan and bake for about 45 minutes or until top looks set but toothpick comes out with moist crumbs attached. Don't overbake! This is best even slightly underbaked.
  4. Let rest on a cooling rack and serve slightly warm with vanilla ice cream or whipped cream.

STRAWBERRY CHEESECAKE - NO BAKE - VALENTINE'S DAY

Valentine’s Day Strawberry Cheesecake
This is one of my favorite cheesecakes especially for Valentine’s Day. It is so full of flavor and just enough sweetness to share with those you love.
We had this for breakfast Valentine's Day 2016.  It was very yummy!  Isn't too sweet so perfect for breakfast or brunch.  Loved the added nutella, cocoa powder and cinnamon for the crust.  As I was making it I thought it might be fun to add a white chocolate layer.  I think I might the right call.  It was delish!  Tasted even better the next day.  Added the extra layer instructions at the end.  Everyone really liked this.  Since you don't have to cook this...this would be perfect for summer.  Try to make the day before you want to eat.  Allow approx. 4 hours to make.

Curious how this would work out with blueberries...must try :-)
Ingredients
    CRUST:
  • 7 whole graham crackers
  • 4 tablespoons unsalted butter, melted
  • 2 tablespoons nutella
  • 2 tablespoons brown sugar
  • 2 tablespoons cocoa powder
  • ½ tablespoon cinnamon
  • STRAWBERRY TOPPING:
  • 1 pound fresh or frozen strawberries, washed and stemmed
  • 1/4 cup sugar
  • 1 envelope unflavored gelatin
  • CHEESECAKE:
  • 2 (8 ounces) cream cheese, softened
  • 1/2 cup confectioners' sugar
  • 1 teaspoon vanilla extract
  • 1 1/4 cups strawberry topping (see above)
  • 1/2 cup heavy whipping cream
  • Fresh strawberries for garnish

  • WHITE CHOCOLATE MOUSSE (SEE BELOW)
Instructions
    Crust
  1. In a food processor or blender grind the graham crackers until they are in a fine powder.
  2. Add the butter, nutella, brown sugar, cinnamon, and cocoa powder and process until thoroughly mixed.
  3. You may have to scrape down the sides of the bowl/blender a few times.
  4. Press the crust evenly into the bottom of an 8 or 9-inch Springform Pan .
  5. It should come up the sides slightly.
  6. Strawberry Topping
  7. In a saucepot add the strawberries, sugar, and 2 tablespoons of water.
  8. Cook over medium heat until the strawberries are quite soft.
  9. Use a blender to puree the fruit and then return to the pot to finish cooking.
  10. Sprinkle the gelatin over 2 tablespoons of cold water in a small bowl.
  11. Allow it to sit for about 1 to 2 minutes.
  12. Transfer the gelatin to the strawberries and gently cook over low heat.
  13. Whisking just until the gelatin is completely dissolved, and then remove pan from heat.
  14. Reserve 3/4 cup of the strawberry mixture for the top layer of the cake.
  15. Cheesecake:
  16. In a stand mixer beat the cream cheese and sugar on medium-low speed until smooth.
  17. Add the vanilla extract and the strawberry topping, except the ¾ cup you have reserved for the top layer.
  18. In a separate bowl whip the heavy cream until medium peaks.
  19. Fold the heavy whipped cream into the strawberry cheesecake batter.
  20. Gently folding just until it is all combined.
  21. Pour the cheesecake into the prepared pan.
  22. Tap the pan gently on the counter to bring any air bubbles to the surface.
  23. Let it sit, uncovered, in the refrigerator for about 2 hours or until it is set to the touch.
  24. Once the cheesecake is set, pour the remaining ¾ cup strawberry topping over it.
  25. If the topping has set up in the pot, gently heat it for a minute, just until it is pourable (or heat in microwave for 30 seconds).
  26. Place the cheesecake back into the refrigerator and allow to set, uncovered, for another 30 minutes, or until the topping is set.
  27. At this point it is ready to serve or you can cover the cheesecake with plastic and it can sit in the refrigerator for 24 hours.
  28. Before unlocking the Springform Pan , run a knife around the edge of the cheesecake to loosen it.
  29. Top with the fresh strawberries.

    White Chocolate Mousse:
  • 1 cup heavy whipping cream
  • 1/4 teaspoon vanilla extract
  • 2 tablespoons powdered sugar
  • 4 ounces cream cheese, softened
  • 4 ounces white chocolate baking squares, melted
  1. For the white chocolate mousse, in a medium bowl, beat the cream and vanilla with an electric mixer (handheld or stand mixer) until soft peaks form. Add the powdered sugar and mix until combined and the peaks are slightly stiffer. In a separate bowl, beat the cream cheese until fluffy. Add the white chocolate and mix until smooth and creamy. Fold in the whipped cream, taking care not to deflate the whipped cream, and mix gently with a rubber spatula, lifting and turning the cream, until the mousse is combined and creamy.
