KENTUCKY
BUTTER CAKE
This cake goes very well with strawberries
and whip topping!
CAKE
1 cup butter, cubed at room temperature
2 cups sugar
4 eggs
1 T vanilla
3 cups flour
1 tsp kosher salt
1 tsp baking powder
½ tsp baking soda
1 cup buttermilk
BUTTER GLAZE
1/3 cup butter
¾ cup sugar
2 T water
2 tsp vanilla
Preheat oven to 325.
Grease a 10” bundt pan with butter or shortening
very liberally. Dust pan with flour and
set aside.
Place all the cake ingredients in the bowl of
your stand mixer fitted with the paddle attachment. Mix on low for 30 seconds and then increase
the speed to medium and mix for 3 minutes.
Pour batter into prepared pan and bake for
65-75 minutes until a toothpick entered into the center comes out clean.
When the cake is done make the glaze. Combine all ingredients into a small saucepan
over medium-low heat. Stir continuously
until the butter is melted and the sugar is dissolved. Do not bring to a boil.
Poke holes all over the warm cake using a
knife and pour the glaze evenly on the cake while still in the pan.
Allow the cake to cook completely in the pan
and then invert the cake onto a serving plate.
Tip: It is more moist and flavorful when it
has rested overnight.

ANGEL FOOD CAKE WITH ROASTED STRAWBERRY SAUCE
We really liked. So much better than store bought or boxed. Loved strawberry sauce - would be good on ice cream.
We really liked. So much better than store bought or boxed. Loved strawberry sauce - would be good on ice cream.
- 1 1/4 cups (125 grams) sifted cake flour
- 1 1/2 cups (300 grams) granulated white sugar
- 1 1/2 cups (360 ml) egg whites, at room temperature (from about 12 large eggs)
- 1 teaspoon cream of tartar
- 1 tablespoon fresh lemon juice
- 1/2 teaspoon McCormick® pure vanilla extract
- 1/2 teaspoon McCormick® pure almond extract
Angel Food Cake
- 2 cups (250g) sliced fresh strawberries
- 2 tablespoons maple syrup
- 1/4 teaspoon McCormick® ground cinnamon
- 10 ounces of strawberry spread (or jam, jelly preserves)
- Cool Whip (optional)
Roasted Strawberry Sauce
- Heat oven to 350 degrees F and locate your angel food cake pan. Do not butter or spray or grease pan in any way.
- In a large bowl sift together 3/4 cup (150 grams) granulated white sugar and the sifted cake flour. (this is half of the sugar and all of the flour)
- In the bowl of your stand mixer fitted with the whisk attachment, beat the egg whites until foamy, about 2 minutes.
- Add the cream of tartar, lemon juice, vanilla and almond extract, and salt and continue to beat until soft peaks form, roughly 2-3 minutes.
- Gradually beat in the remaining 3/4 cup (150 grams) granulated white sugar, a tablespoon at a time, until glossy stiff peaks form.
- You may need to scrape down the sides of the bowl.
- Remove bowl from stand mixer.
- Sift the flour mixture (1/4 cup at a time) over the egg whites and using a rubber spatula, gently fold (do not stir) the flour into the egg whites.
- Pour the batter into the pan and run a metal spatula or knife through the batter to get rid of any air pockets. Smooth the top and bake in the preheated oven for about 40 - 45 minutes. The cake is done when the cake springs back when gently pressed or there are cracks over the top.
- Immediately upon removing from the oven invert the pan and allow the cake to cool for about 1 1/2 hours.
- When completely cool, run an offset spatula or knife around the sides and center tube of the pan to loosen the cake and then remove the cake from the pan.
- Next, use the offest spatula (or knife) along the bottom and remove.
- Set cake on cake stand.
Angel Food Cake
- Place sliced strawberries in a single layer on a baking sheet lined with parchment paper.
- Drizzle evenly with syrup and sprinkle cinnamon on top.
- Roast strawberries at 400F 10-12 minutes or until berries are tender and have begun to release their juices.
- Place strawberry spread into a medium bowl. Dump roasted strawberries on top of spread and mix together with a fork.
- If mixture seems too thick can add up to 1/2 cup warm water.
- When ready to serve, pour some sauce (not all) over cake. Cut cake using either a very (very) sharp knife or a serrated knife. Use a 'saw' motion and try not to press the cake down as you cut. Place piece on a plate and drop a dollop of whipped cream on top. Cover with more strawberry sauce.
- Repeat.

STRAWBERRY SHORTCAKE CUPS
We got lots of strawberries from bountiful baskets. Have always wanted to make strawberry shortcake. It made a perfect Sunday night meal.
Recipe found in Taste of Home Contestant Winning 2006 pg 219.
1 qt fresh strawberries
4 T sugar, divided
1 1/2 cup flour
1 T baking powder
1/2 tsp salt
1/4 cup cold butter
1 egg
1/2 cup milk
Whipped Cream (cool whip or dream whip works too)
Mash or slice strawberries. Add 2 T of the sugar and put in fridge until ready to eat.
Combine flour, baking powder, salt and remaining sugar; cut in butter util crumbly. In a small bowl, beat egg and milk; stir into flour mixture just until moistened.
Fill eight greased muffin cups 2/3 full. Bake at 425 for 12 min or until golden brown.
Remove and cool on wire rack.
Just before serving, split the shortcakes in half horizontally. Spoon berries and whipped cream between layers and over the top.

STRAWBERRY CHEESECAKE - NO BAKE - VALENTINE'S DAY
Valentine’s Day Strawberry Cheesecake
This is one of my favorite cheesecakes especially for Valentine’s Day. It is so full of flavor and just enough sweetness to share with those you love.
We had this for breakfast Valentine's Day 2016. It was very yummy! Isn't too sweet so perfect for breakfast or brunch. Loved the added nutella, cocoa powder and cinnamon for the crust. As I was making it I thought it might be fun to add a white chocolate layer. I think I might the right call. It was delish! Tasted even better the next day. Added the extra layer instructions at the end. Everyone really liked this. Since you don't have to cook this...this would be perfect for summer. Try to make the day before you want to eat. Allow approx. 4 hours to make.

Ingredients
- 7 whole graham crackers
- 4 tablespoons unsalted butter, melted
- 2 tablespoons nutella
- 2 tablespoons brown sugar
- 2 tablespoons cocoa powder
- ½ tablespoon cinnamon
- 1 pound fresh or frozen strawberries, washed and stemmed
- 1/4 cup sugar
- 1 envelope unflavored gelatin
- 2 (8 ounces) cream cheese, softened
- 1/2 cup confectioners' sugar
- 1 teaspoon vanilla extract
- 1 1/4 cups strawberry topping (see above)
- 1/2 cup heavy whipping cream
- Fresh strawberries for garnish
- WHITE CHOCOLATE MOUSSE (SEE BELOW)

Instructions
- In a food processor or blender grind the graham crackers until they are in a fine powder.
- Add the butter, nutella, brown sugar, cinnamon, and cocoa powder and process until thoroughly mixed.
- You may have to scrape down the sides of the bowl/blender a few times.
- Press the crust evenly into the bottom of an 8 or 9-inch Springform Pan .
- It should come up the sides slightly.
- In a saucepot add the strawberries, sugar, and 2 tablespoons of water.
- Cook over medium heat until the strawberries are quite soft.
- Use a blender to puree the fruit and then return to the pot to finish cooking.
- Sprinkle the gelatin over 2 tablespoons of cold water in a small bowl.
- Allow it to sit for about 1 to 2 minutes.
- Transfer the gelatin to the strawberries and gently cook over low heat.
- Whisking just until the gelatin is completely dissolved, and then remove pan from heat.
- Reserve 3/4 cup of the strawberry mixture for the top layer of the cake.
- In a stand mixer beat the cream cheese and sugar on medium-low speed until smooth.
- Add the vanilla extract and the strawberry topping, except the ¾ cup you have reserved for the top layer.
- In a separate bowl whip the heavy cream until medium peaks.
- Fold the heavy whipped cream into the strawberry cheesecake batter.
- Gently folding just until it is all combined.
- Pour the cheesecake into the prepared pan.
- Tap the pan gently on the counter to bring any air bubbles to the surface.
- Let it sit, uncovered, in the refrigerator for about 2 hours or until it is set to the touch.
- Once the cheesecake is set, pour the remaining ¾ cup strawberry topping over it.
- If the topping has set up in the pot, gently heat it for a minute, just until it is pourable (or heat in microwave for 30 seconds).
- Place the cheesecake back into the refrigerator and allow to set, uncovered, for another 30 minutes, or until the topping is set.
- At this point it is ready to serve or you can cover the cheesecake with plastic and it can sit in the refrigerator for 24 hours.
- Before unlocking the Springform Pan , run a knife around the edge of the cheesecake to loosen it.
- Top with the fresh strawberries.

Cheesecake:
- 1 cup heavy whipping cream
- 1/4 teaspoon vanilla extract
- 2 tablespoons powdered sugar
- 4 ounces cream cheese, softened
- 4 ounces white chocolate baking squares, melted
White Chocolate Mousse:
- For the white chocolate mousse, in a medium bowl, beat the cream and vanilla with an electric mixer (handheld or stand mixer) until soft peaks form. Add the powdered sugar and mix until combined and the peaks are slightly stiffer. In a separate bowl, beat the cream cheese until fluffy. Add the white chocolate and mix until smooth and creamy. Fold in the whipped cream, taking care not to deflate the whipped cream, and mix gently with a rubber spatula, lifting and turning the cream, until the mousse is combined and creamy.

This was very tasty! I used frozen strawberries so they were really blended. Next time would be fun to do fresh and not blend so much. I think it would also be good with lime added. I added 1 1/4 cup sugar.

Easy Homemade Strawberry Lemonade Recipe
Ingredients
- 2 cups of strawberries
- 1 cup lemon juice (you can do fresh squeezed or just buy the bottle at the store – shake it good first!)
- 1 cup sugar (add a little more if you want it sweeter)
- 5 cups of water (I like to add ice to make 5 cups so the lemonade is nice and cold)
Instructions
- Blend lemon juice, sugar, only 1 cup of the water, and strawberries until desired consistency.
- In a separate pitcher, add the remaining 4 cups of water with mixture.
- Enjoy!

SPINACH SALADS
MATT & MANDY'S FAMOUS SALAD
This is from The Friend magazine. We really liked it.
4 slices bacon, cooked & crumbled
1 package (6 oz) baby spinach leaves
1 can (11 oz) mandarin oranges
1/4 cup sliced almonds
Dressing:
1/4 cup sugar
1/3 cup vinegar
1/4 tsp salt
2 T canola oil
SPINACH SALAD
This came from Candace (Pacific Yurts). We all really liked it.
10 oz fresh salad (baby works best)
1 quart sliced strawberries
1/4 c sliced almonds
Dressing - mix in a jar and shake - refrigerate 1 hour
(this makes enough for a really big salad or two salads)
1 1/2 T Sesame Seeds
1 T Poppy Seeds
1/2 c white sugar
1/4 c cider vinegar
1/4 tsp Worcestershire
1/2 c olive oil
1 T Paprika
1 1/2 T Minced Onions (I never add this much)

FRUIT POPS
Abagail chose these for FHE refreshment. We took some frozen raspberries and blackberries. Fresh strawberries and kiwi and cut them up. Added some orange juice to that mixture and blended a little (left some chunks). Filled some disposable plastic cups with fresh blueberries (about 1/2 handful) then added the orange juice mixture. Put in a popcicle stick and then froze. Run under hot water to release once frozen. They turned out really good and refreshing. Could do any fruit combination. The only thing we would do different is add some sweetener - either sugar or agave. From a RS activity someone suggested using vanilla pudding powder for a sweetener.

Directions
- Place the mixed blueberries, raspberries, strawberries, sliced bananas, yogurt, and sugar into a blender. Cover, and blend until fruit is chunky or smooth, as desired.
- Fill paper cups 3/4 full with fruit mixture. Cover the top of each cup with a strip of aluminum foil. Poke a popsicle stick through the center of the foil on each cup.
- Place the cups in the freezer for at least 5 hours. To serve, remove foil and peel off the paper cup.
