NO CHURN ICE CREAM - REQUIRES NO MACHINE

NO CHURN ICE CREAM
We did this for St. Patricks Day 2017.  Could use any toppings/flavorings.  We liked.  Not the same consistency as real ice cream but easy and good.

  • 2 cups heavy whipping cream
  • 1 14 oz. can sweetened condensed milk
  • ½ tsp vanilla extract
  • ½ - 1 tsp mint extract
  • 3-5 drops of green food coloring
  • 20 chocolate mint cookies, broken into pieces
  • ½ cup mini chocolate chips

  1. With a mixer, beat the whipping cream until stiff peaks form.
  2. In another bowl combine condensed milk, extract and food coloring. Mix to combine
  3. Fold milk mixture into whipped cream mixture until combined.
  4. Gently fold in cookies and chocolate chips.
  5. Put in a container and cover.
  6. Place in freezer for at least 6 hours or overnight.

BREAKFAST POCKETS
These were really good.  Froze most of them for kids to have later.  Reheated well.  The only things the kids didn't like was the potatoes.


  • tablespoons yeast
  • ½
    cup warm water (110 degrees)
  • ¾
    cup evaporated milk (110 degrees)
  • ½
    cup vegetable oil
  • ¼
    cup sugar
  • 1
    egg
  • 1
    teaspoon salt
  • cup flour

  • Filling:
  • 1
    pound bulk sausage
  • ½
    cup onion, chopped
  • cup frozen hash brown potatoes, thawed
  • 7
    large eggs
  • 3
    tablespoons milk
  • ½
    teaspoon salt
  • ½
    teaspoon pepper
  • ½
    teaspoon garlic salt
  • pinch of cayenne pepper
  • 2
    cups cheddar cheese, shredded

    Dough: In a bowl, dissolve yeast in the water. Add milk, oil, sugar, egg, salt, and 2 cups flour; beat until smooth. Add enough flour until it makes a soft dough but do not knead. Cover and let rise in a warm place until doubled, about 1 hour.

    Filling: Cook the sausage and onion over medium heat until browned. Drain. Add the hash browns, eggs, milk, and spices. Cook and stir until set. Sprinkle with cheese and keep warm. Assembling the pockets: Preheat oven to 350 degrees fahrenheit. Punch down the dough and cut into 16 equal pieces. Roll each piece into 7 in circle on a floured surface. Top with 1/3 c filling, fold, and pinch shut. Bake for 15-20 minutes.

    To freeze: Allow to cool on the baking sheet. Once cooled, place in the freezer until frozen. Store in a ziplocK bag in the freezer for 3-6 months. To reheat, place on a paper towel and microwave for 1 1/2-2 minutes.

ONE INGREDIENT BANANA ICE CREAM

I had heard of this ice cream but always hesitant to try it.  It was a hot summer day and we had lots of bananas (4 or 5) that needed to be used so I thought why not try it.  I was surprised how good it turned out.   I added peanut butter (1 T next time I would add more)  and mini choc chips.   The kids didn't watch me make it.  Abagail said, "I think next time it needs less bananas."  Haha...that cracked me up.

I put bananas in ziploc bag to freeze. Used food processor and then put mixture back in ziploc to refreeze.

Instructions
Start with ripe bananas: They should be sweet and soft.
Peel the bananas and cut them into coins: It doesn't matter what shape or size the pieces are in, as long as they are chopped up into evenly sized and somewhat small pieces.
Put the bananas in an airtight container: A freezer-safe glass bowl like this one is fine, or you can use a freezer bag.
Freeze the banana pieces for at least 2 hours: Freeze for at least 2 hours, but ideally overnight.
Blend the frozen banana pieces in a small food processor or powerful blender: Pulse the frozen banana pieces. We've found that a small food processor or chopper works best.
Keep blending — the banana will look crumbly: At first the banana pieces will look crumbled or smashed. Scrape down the food processor.
Keep blending — the banana will look gooey: Then it will look gooey, like banana mush. Scrape down the food processor.
Keep blending — the banana will look like oatmeal: It will get smoother but still have chunks of banana in it. Scrape down the food processor.
Watch the magic happen! Suddenly, as the last bits of banana smooth out, you'll see the mixture shift from blended banana to creamy, soft-serve ice cream texture. Blend for a few more seconds to aerate the ice cream. (If adding any mix-ins, like peanut butter or chocolate chips, this is the moment to do it.)
Transfer to an airtight container and freeze until solid: You can eat the ice cream immediately, but it will be quite soft. You can also transfer it back into the airtight container and freeze it until solid, like traditional ice cream.
Recipe Notes
Food processor vs. blender: We've found that a food processor works best for this, with enough room for the banana to get fully creamy and a little bit aerated. Some people do make it in a blender, but be careful; make sure your blender is powerful enough to process the frozen bananas.
Making a bigger batch: Yes, you can make a bigger batch with more than one banana! Just make sure your food processor is big enough (and powerful enough).
Mix-in Ideas
While the one-ingredient aspect of this ice cream is a big part of its charm, we don't think that loses much when it becomes two- or even three- ingredient ice cream. Here are a few favorite mix-ins to make it even more awesome.

Spoonful of peanut butter
Drizzle of honey
Handful of chocolate chips (mini works best)
A few almonds
Dollop of Nutella
Scoop of cookie butter
Tablespoon of cocoa powder
Half a teaspoon of cinnamon, cardamom, or ginger

BREAKFAST BURRITOS

BREAKFAST BURRITOS
These are really good.  Love making a big batch and keeping some in the freezer.  Some times I add spinach to the eggs.  I would also like to try adding frozen tater tots hoping they would warm up enough when cooking burrito in the oven.  I like to eat them with Taco Sauce.

UPDATE: This is seriously one of my families favorite meals for dinner, breakfast or lunch.  I like to make lots and freeze.  I think they taste better once they have been frozen and reheated.  We like the sausage links instead of ground sausage.  This last time I got one package regular and one package bacon flavored.  Each burrito got one of each. Yum!  Also my favorite cheese combo is sharp cheddar and monteray jack.  I put a little in each.  Yum!  We like to have with fruit salad and potato rounds or tots.

UPDATE: Made these to eat on a trip to WA for Lexi's baby blessing.  Lisa had the idea of adding green chilies - must try!
 
FOR ONE FAMILY
1 to 1 1/2 lbs ground sausage cooked
12 eggs scrambled ( salt and pepper) 1 cup shredded cheddar
1 cup shredded pepper jack (any cheese will work)
8 burrito size tortillas

 
FOR SIX FAMILIES
6 – 9 lbs ground sausage
72 eggs scrambled w/ salt/pepper
6 cups shredded cheddar
6 cups shredded pepper jack
48 burrito size tortillas

TO PREP: Cook sausage, scramble eggs, shred cheeses.

TO PREPARE FOR FREEZING: Fill tortillas 1/4 cup cheese (half cheddar and half pepper jack), 1/2 cup eggs, 1/4 cup sausage. Wrap into burrito and then wrap in foil. Place wrapped burritos in freezer bag.

TO PREPARE AFTER FREEZING: Thaw. Bake at 350 for 10-15 minutes until cheese is melted and heated through. (Rotate halfway through baking) Could warm on grill, place wrapped burrito on grill. Rotate until warm through. Could heat in microwave, tortilla will be soft.

This makes 12-18 burritos
  • 1 pound ground pork sausage (bacon good too)
  • 1 lb. frozen cubed Ore Ida potatoes
  • 12 eggs, beaten
  • 2 T. milk
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 2 T. butter
  • 2 10 oz. cans green chili sauce
  • 12-16 burrito sized flour tortillas (I used regular size whole wheat tortillas this time and was able to make about 10 burritos.)
  • 2 cups cheddar cheese, grated
    To prep the burrito ingredients:
  1. In a large skillet, brown the sausage. Remove from heat and drain excess fat. Set aside. Brown potatoes in oven by placing them on a baking sheet and broiling according to package instructions until crisp. Meanwhile, mix eggs, milk, salt and pepper together in a medium mixing bowl. Over medium heat, melt the butter in separate large skillet. Add egg mixture to skillet and scramble the eggs, removing from heat once the eggs are cooked but still moist. Warm green chili sauce over medium heat in saucepan until warmed through.
  2. To assemble the burritos and prep to freeze:
  3. Warm the flour tortillas on skillet or in the microwave until soft and flexible. Fill tortillas with 1/3 cup scrambled eggs, 2-3 T. sausage, and 1/3 cup potatoes. Top with cheddar cheese and green chili sauce according to taste. Fold tortillas snuggly into burritos. Wrap each burrito in plastic wrap, then place in freezer bags. Freeze.
  4. On serving day:
  5. Remove burrito from freezer and remove plastic wrap. Wrap in a paper towl and place in microwave on defrost for 3 minutes, then on high for 1 minute. Let cool and enjoy with sour cream or salsa!

CAKE POPS

CAKE POPS
Love, love, love these.  We tried to win these at an auction and they were too much.  Amy Cunningham (Myah made them) gave me the recipe and the holder to use.  I since have seen on pinterest (also pinned some different ones) that you can use an egg carton to hold them while they dry.  I ran out of sticks so I just used a fork hold the pop while I poured chocolate over it then put on sprinkles (next time roll in sprinkles or topping) then dried on parchment paper.  They dry really fast.

1 cake mix (don't buy one with  pudding in the mix - make them hard to roll)
1 can of frosting (milk chocolate)
sticks
plastic to wrap pops
ribbon
springkles
melting chocolate (I used from the bulk at WinCo 1/2 dark chocolate 1/2 milk) almond bark would be good too.
egg carton or craft foam to hold the suckers

1st - bake cake
2nd - once slightly cooled break and crumble in a bowl
3rd - Mix about 1/4 of the can of frosting -a little bit more if you want brownie type pops.
4th - with a mixer mix until it creates a big ball
5th - cover really well and freeze for at least 2 hours
6th - remove from freezer and form into individual balls (scoopers work really well)
7th - refreeze for a couple more hours
8th - melt chocolate and cover balls
9th - decorate balls right after putting on chocolate - it hardens really fast
10th - put in bag if giving away or on a plate for serving

TOMATO SOUP

  • Plant based roasted tomato soup
  • Took awhile to make but so worth it. Yummy! Can easily double or triple recipe.

  • 15 whole roma tomatoes
  • 3 whole heads garlic peels left on
  • whole onion cut into eighths
  • 1 handful fresh basil stems removed and chopped
  • 2 tsp brown sugar
  • 1/4 tsp celery seeds
  • 1 splash low sodium soy sauce
  • 1 1/2 cups tomato (or vegetable) juice V-8 Low sodium brand works well
  • 1/2 tsp apple cider vinegar
  • 1/4 cup oat milk
  • 1-2 splashes Cholula hot sauce hot sauce of your choice works as well
  • tsp fresh black pepper
  • 2 tsp Italian seasoning
  • 2 cups vegetable stock

Instructions

  1. Preheat oven to 400 degrees F

  2. Cut the Roma tomatoes in half and place on baking sheet 

  3. Wrap the garlic heads in foil and place on the baking sheet with the tomatoes

  4. Add the onions to the baking sheet along with the tomatoes and garlic

  5. Roast the veggies in the oven for 45 minutes to an hour.  They are done when the tomatoes are giving off juice and the onions are blackened on the tips but not burned overall.

  6. Once the tomatoes, garlic and onions are roasted, set them aside to cool to touch. Then, squeeze the roasted garlic cloves out of the skins, discard the skin and set aside the roasted garlic cloves.

  7. In a blender, blend garlic, onions, and tomatoes, hot sauce,  1 to 1.5 cups of the vegetable stock, 1 cup tomato juice a little at a time until smooth.

  8. Add 1/2 of the basil and blend

  9. Pour mixture into a large sauce pan, heat on medium heat, adding the Italian seasoning, celery seeds, brown sugar, oat milk, pepper to taste, a splash of hot sauce to taste and a splash of low sodium soy sauce and the rest of the milk to taste.

  10. Taste and if it's too sweet, adjust with a little apple cider vinegar.  If it's too sour, sprinkle in more brown sugar. 

  11. Serve warm soup and enjoy!


TOMATO SOUP

I love this soup!  Can't wait to have some this winter with grilled cheese.
I made this at Lisa's house.  I got 8 quart zip lock bags.  Use 3 big pots (one needs a good lid), biggest silver bowl, glass measuring (4 cup) with a handle, big slotted spoon, big cup to put zip lock in to pour soup.

Use large pan with good lid
6 onions
2 large Red Bell Peppers - green works too
6 stalks of Celery
Small head of Garlic (to taste) - 1 heaping T minced garlic
Cook adding no liquid - slowly - 30 min to an hour
Vegetables should be soft especially the celery

While vegetables are cooking heat up water in a big pot until boiling.  Wash and put in as many tomatoes as will fit.  Cook for 3 minutes.  Once 3 minutes are up transfer tomatoes with slotted spoon to sink filled with cool water.  Slip off skins and cut off any bad parts.  Cut in quarters and fill pot big enough to hold 2 gallons of tomatoes.  Cook these tomatoes with 2 bay leaves (I forgot this step both times I did it).  Throw bay leaves away after cooking tomatoes.

In your blender blend the vegetables along with the tomatoes.
Either blend or wisk in later ½ c. melted butter 
Mix together:
1 c. flour 
1/4 c. salt 
almost 1 cup sugar or to taste

Can either pour into freezer containers (if doing bags - put bag in a big cup and then pour).  When putting in freezer make sure and put down a bag or box on bottom if it is not flat.

If going to bottle - Cook until hot.  Then put in quart jars and water bath for 30 min.

Makes 9-10 quarts of most delicious tomato soup

EASY THREE-INGREDIENT TOMATO SOUP
My family did eat this for one meal but didn't want any of the leftovers.  I liked it better than above recipe and it was easier.  I will mix with a can of Campbells tomato soup so they will eat the rest.  I froze what was left.

  • 4 tablespoons unsalted butter
  • 1/2 large onion, cut into large wedges
  • 1 (28-ounce) can tomatoes, we prefer to use whole peeled or crushed
  • 1-1/2 cups water
  • 1 teaspoon coarse kosher salt, or more to taste

Directions
  1. Melt butter over medium heat in a Dutch oven or large saucepan. Add onion wedges, water, can of tomatoes with their juices and the salt. Bring to a simmer. Cook, uncovered, for about 40 minutes. Stir occasionally and add additional salt as needed.
  2. We usually add an additional 1/2 to 3/4-teaspoon of salt since the tomatoes can be quite acidic. Since this depends on how sweet/acidic the tomatoes are, add according to your taste.
  3. Blend the soup -- it doesn't need to be ultra-smooth, some texture is a nice touch. An immersion blender makes quick work of this or use a blender.
  4. If you use a regular blender, it is best to blend in batches and not fill the blender as much as you usually would since the soup is so hot. We like to remove the center insert of the lid and cover it with a kitchen towel while blending — this helps some of the steam release and prevents the lid from popping off (which can be a big, hot mess).

FRUIT POPS

Abagail chose these for FHE refreshment.  We took some frozen raspberries and blackberries.  Fresh strawberries and kiwi and cut them up.  Added some orange juice to that mixture and blended a little (left some chunks). Filled some disposable plastic cups with fresh blueberries (about 1/2 handful) then added the orange juice mixture.  Put in a popcicle stick and then froze.  Run under hot water to release once frozen.  They turned out really good and refreshing.  Could do any fruit combination.  The only thing we would do different is add some sweetener - either sugar or agave.  From a RS activity someone suggested using vanilla pudding powder for a sweetener.

Directions

  1. Place the mixed blueberries, raspberries, strawberries, sliced bananas, yogurt, and sugar into a blender. Cover, and blend until fruit is chunky or smooth, as desired.
  2. Fill paper cups 3/4 full with fruit mixture. Cover the top of each cup with a strip of aluminum foil. Poke a popsicle stick through the center of the foil on each cup.
  3. Place the cups in the freezer for at least 5 hours. To serve, remove foil and peel off the paper cup.
