SNACK MIXES 3

BUNNY BAIT
Kambria sent this to me thinking we might like it.  Um yeah!  It is highly addictive.  So, so good.  Makes a full cookie sheet.  I made it to take to Primary but they ended up not needing it so we took to play with us Charlie and Chocolate Factory (Pleasant Hill Theater).  Everyone liked it.  Good without M&M too. I could eat a gallon size bag of this stuff.  Easy to double.

2 cups pretzels
1 bag popped white popcorn
1 package Almond Bark white melting chocolate
1 bag of festive M&M’s
2 cups of Chex cereal
1 container of sprinkles
Spread pretzels , popcorn and Chex on an foil covered bakinig sheet and drizzle white chocolate over the mixture ... Gently stir to coat evenly ... Add sprinkles but don’t stir it anymore or the sprinkles will be coated with chocolate and turn white ... Let harden on cookie sheets and then break apart and add M&M’s to the finished mixture ...

The ideas for packaging are endless , cute bags to give away as favors or just put it in a big bowl and it will be a hit !! 

BACON FLUFFERNUTTER PUPPY CHOW

  • ¼ cup unsalted butter
  • ¼ cup creamy peanut butter
  • ¼ cup marshmallow cream/fluff
  • 1 cup peanut butter chips
  • 8 cups rice cereal squares (like Chex)
  • 1 cup powdered sugar
  • 5 strips bacon, cooked crispy and crumbled

  1. Add the butter, peanut butter, marshmallow cream, and peanut butter chips to a microwave safe bowl.
  2. Heat the bowl for 1 minute in your microwave. Carefully remove the bowl and stir until the chips begin to melt. Heat for another 45 seconds. Carefully remove the bowl from the microwave and stir the peanut butter mixture until smooth. (You'll have a few lumps from the marshmallow, that's okay.)
  3. Add the rice cereal to a large mixing bowl. Pour the peanut butter mixture over the cereal. Use a spoon or spatula to stir the cereal until it is completely coated in the peanut butter.
  4. Transfer the cereal to a gallon-sized Ziploc bag.
  5. Add powdered sugar and bacon to the Ziploc bag. Seal the bag and shake vigorously until the cereal is completely coated in the sugar.
  6. Transfer to a serving bowl, or refrigerate until ready to serve.

For a little extra marshmallow flavor, add 1 cup of mini marshmallows to the Ziploc bag before shaking!

Sugared Corn Pops Recipe
Prep Time: 10 minutes
Cook Time: 10 minutes
Yield: 3 quarts

This is really good, but sweet.  You find the corn pops in chip isle.  The bag I got was 2 quarts (measured at home) so I halved the recipe.  Would be fun to make and hand out for holiday gifts for friends etc.
Ingredients
  • 3 quarts corn pops (found in chip isle)
  • 1 cup granulated sugar
  • 1/2 cup butter, cut into chunks
  • 2 tablespoons light corn syrup
  • 1 tablespoon water
  • 1 teaspoon vanilla
Instructions
  1. Preheat oven to 200 degress. Spray a rimmed baking sheet with nonstick cooking spray or use a silicone baking mat. Measure out the corn pops and place them in a large bowl. Set aside.
  2. In a medium saucepan, heat sugar, butter, corn syrup and water over medium heat until it begins to bubble, stirring regularly. Then boil for 4 minutes, stirring constantly. Remove from heat and stir in the vanilla.
  3. Pour the syrup mixture over the corn pops and stir gently for a few minutes to coat. Transfer corn pops to the prepared baking sheet and spread them out evenly. Bake for 10 minutes.
  4. Let cool, then break apart the pieces and serve.
Notes

This recipe doubles nicely!

MICROWAVE SALTED CARAMEL POPCORN
Love, love, love this popcorn.  It was so easy.  Next time I would just my air popper to pop it (a lot of kernels didn't pop or do 6 min).  I added 1/4-1/2 cup (just poured didn't measure) peanuts.
Ingredients
  • 1 c. popcorn kernels (don't pop more than 1 cup)
  • 1/2 c. butter
  • 1 c. brown sugar
  • 1/4 c. corn syrup
  • 1 tsp. baking soda
  • 1 tsp. vanilla
  • 1 tsp. kosher salt
  • peanuts
Instructions
  • Place popcorn kernels in large paper grocery bag.
  • Microwave on high for about 4 minutes (microwave times may vary). Set aside.
  • Place butter, sugar and corn syrup in a microwave-safe measuring cup or bowl.
  • Microwave on high for 2-3 minutes, stirring every minute, until butter is melted and mixture is bubbly.
  • Add baking soda, vanilla and kosher salt. Stir until foamy.
  • Pour caramel mixture over popped popcorn in bag.
  • Stir to combine.
  • Microwave for 1 minute.
  • Remove from microwave and eat up!

Carmel Corn

Carmel Corn Recipe from Jessica (do not share)

24 cups popped popcorn (remove all leftover kernels)
1 cup butter (I use real butter)
2 cups brown sugar
1/2 cup light corn syrup
1 tsp. baking soda
1 tsp. salt
1 tsp.butter flavoring (this is the secret ingredient, don't leave it out!)
Combine butter, brown sugar, and corn syrup. Boil for 5 minutes. Stir in baking soda, salt, and flavoring. Mix well. Pour over popped corn and mix well. Spread onto cookie sheets and bake in a 200 degree oven for 1 hour, stirring every 15 minutes.

Abagail didn't like this, but Jackson and I both did.  Will take to a party at Lisa's tomorrow night and see how it does.  Didn't go over too well (but maybe because we had lots of food?)  Kylan was so excited to have popcorn and then when he tried it he said, "I am never having another piece of that popcorn in my life."

Next time try same amount of popcorn and 1/2 of the sauce. Maybe it won't be so overpowering? 

UPDATE 4/2019: Abagail is trying to eat no added sugar (honey ok) so thought I would try this again.  I did 1/4 cup butter, 1/4 cup coconut oil and everything else the same.  I also cooked in the oven for about 30-40 min at 250.  Then sprinkled some dark chocolate chips on top.  Was yummy!

UPDATE:
2 batches in air popper works well.
Ingredients
  • 1/2 cup coconut oil
  • 1/2 cup honey
  • 1/2 teaspoon salt
  • 1 1/2 teaspoon vanilla extract
Instructions
  1. Start with the sauce first. In a small saucepan, melt the coconut oil and honey on a low heat until thoroughly melted. It will look nearly transparent and slightly separated. Whisk together. Remove from heat. Add salt and vanilla. Whisk again. Then set aside.
  2. Pop up a bunch of plain popcorn, about 4 quarts (I did 1/3 cup yellow & 1/3 cup white). Sift the popped popcorn with your fingers, from one large bowl to another in order to lose most of the unpopped kernels.
  3. The sauce is ready when it has cooled a bit. It will be thicker and have more of a milky honey appearance. Drizzle the sauce over the prepared popcorn.
  4. Then fold the sauce into the popcorn until the popcorn is well coated; this will take a few minutes, then it is ready to enjoy!

MARSHMALLOW POPCORN

MARSHMALLOW POPCORN
This was yummy & easy to make.  A little sticky.  Abagail ate it with a fork.  The kids liked mini chocolate chips & mini m&m's sprinkled on top.

Microwave for 2 min (stir about every 30 seconds):
1/2 c brown sugar
1/2 c butter

Add & microwave 1 1/2 min or until melted:
9-10 big marshmallows (I did about 1 1/2 cups mini)

Pour over 12 cups popped popcorn. (I did 1 cup kernals in whirly pop)

Seriously the easiest recipe. And as a bonus it is delicious!
1 10 oz bag of marshmallows
2 cubes margarine or butter
1 cup brown sugar
3 1/2 bags popcorn (I use buttered cause I like the salty/sweet combo!)
Bring brown sugar and butter to a boil. Add marshmallows & reduce heat. Stir until combined. Pour over popcorn. Toss. Cool.
You can also microwave this mixture too. I combine the sugar & butter & melt that completely first & then add the marshmallows & cook for 1-2 minutes.

DIY MICROWAVE POPCORN


place 2 T popcorn kernels in a paper lunch bag.  Fold down twice to close and microwave until popping slows almost to a stop 2-3 minutes. (makes 3 cups)

SNACK MIXES 2

HARVEST BLESSING MIX
Jackson brought this home from school (1st grade - Mrs. Edwards -Lincoln Elem. Rexburg, ID). He just loved it.
Each ingredient in this snack mix symbolizes something associated with the Harvest Season (Thanksgiving).
Bugles - represents a cornucopia, a horn of plenty
Pretzels - represents arms folded in thanks and prayer
Candy Corn/Corn Nuts - during the first Winter, the pilgrims were each allotted only 5 kernels of corn per day because food was so scarce
Dried/Candy Fruits - Thanksgiving is the celebration of the harvest
Peanuts/Sunflower Seeds - seeds represent the potential of a bountiful harvest for the next season if they are planted and well tended

CINNABON CARAMEL POPCORN
Tina brought this to my going away party when we left Oregon. We made it here in Idaho for Jackson to take to school on a "P" day. It is sooo yummy! And smells absolutely wonderful when it is cooking.
PREHEAT oven to 280.
POP 2 bags of popcorn (butter okay)
MIX:
1 cup brown sugar
1 tsp cinnamon
CUT IN:
1 stick of butter
POUR:
1/4 c honey
MICROWAVE:
30 seconds - stir
2 min - stir
2 min - stir
ADD (stir quickly):
1 tsp vanilla
3/4 tsp baking soda
POUR OVER POPCORN and stir a lot
BAKE 30 minutes (or less) - stirring every 10 minutes on a cookie sheet that has been covered in tin foil
MELT:
1/2 - 1 cup white chocolate chips and drizzle on top


Sweet & Salty Crunch Munch

4 cups rice Chex cereal
2 cups popped popcorn
1 cup cheddar Goldfish crackers
1 cup pretzel Goldfish crackers
1 cup lightly crushed plain bagel chips
6 tablespoons unsalted butter, melted
4 tablespoons maple syrup
2 tablespoons reduced-sodium soy sauce
1 tablespoon cinnamon

Heat oven to 250 degrees. Stir together Chex, popcorn, both kinds of Goldfish and the bagel chips. Whisk together butter, syrup, soy sauce, and cinnamon. Drizzle over Chex mixture; stir well. Spread mixture onto a rimmed baking sheet. Bake at 250 degrees for 40 minutes, stirring every 15 minutes, or until golden. Cool completely.

EASTER TRAIL MIX
This is from Nancycreative.  This makes me think of Christmas Crunch that Lisa makes.  She uses $1 store candy (or anything - bulk is a good place) and mix with honey nut cheerios. 
Something that’s hard for me to resist when I see the long aisle of Easter candy at the store are those malted milk Robin Eggs–malt balls covered with a candy coating. I buy them every year and eat way too many of them! This year, I told myself I would not buy them unless I used them in a recipe. And since I’ve been short on time lately, it needed to be something pretty simple. So I came up with an Easter Trail Mix–a blend of chocolatey sweets mixed in with some healthy ingredients. The mini robin eggs and pastel M&M’s give the mix plenty of chocolatey taste and spring color, and the other goodies include raisins, sunflower kernels, coconut flakes, peanuts, and mini pretzel twists. This recipe makes a large bowl of trail mix, so there’s plenty for everyone to munch on!
EASTER TRAIL MIX by NancyC
Makes about 13 cups
  • 1 (13.7 oz.) bag Mini Robins Eggs (almost 3 cups)
  • 1 (11.4 oz) bag milk chocolate easter M&M’s (about 1 2/3 cup)
  • 1 cup raisins (you can use golden or dark raisins)
  • 2/3 cup roasted and salted sunflower kernels
  • 1 cup sweetened dried coconut flakes
  • 1 (16 oz.) container cocktail peanuts or dry roasted peanuts
  • 3 cups mini pretzel twists (you can also use mini pretzel sticks or mini pretzel snaps)
Mix all ingredients together in a large bowl, stirring with a large spoon. Eat right away or store in an airtight container for up to 2 weeks. Makes a great food gift, too, packaged in treat bags!

SNACK MIXES

CRISPIX MIX S'MORES
BEYOND TASTY!!! Found this on the back of a Crispix box. My kids love mixes like this - especially when traveling.

3 cups Crispix cereal
1 cup Teddy Grahams
---
1/4 cup butter, melted
1 T brown sugar
1/2 tsp. cinnamon
---
1 cup miniature marshmallows
1/3 cup M&M's

In a 9x13 mix cereal and Teddy Grahams. In a small bowl, stir together butter, brown sugar and cinnamon. Drizzle over cereal mixture. Stir until coated. Bake at 250 for 45 minutes, stirring every 15 minutes. Spread on foil. Cool completely.

Stir in marshmallows and M&M's. Store in airtight container at room temp for up to 1 week.

9 cups Golden Grahams or Rice Chex
8 cups Corn Chex
2 cups Coconut
1 cup nuts
Bring to a boil and boil for 2 minutes:
1 cup sugar
1 cup light karo syrup
3/4 cup butter
Pour on cereal. Cool and enjoy!

HEARTY MULTIGRAIN SNACK
We all really liked this - made it for FHE. Good one for the kids to help with. Needs to cool for about 30 minutes.

1 egg white
1/4 tsp salt
1/3 cup packed brown sugar
1 tsp cinnamon
3 cups MultiGrain Cheerios
1/3 cup chopped pecans

Heat oven to 300. Lightly grease cookie sheet.

In a large bowl, beat egg white on high speed until foamy; beat in salt. Gradually beat in brown sugar until thick and glossy. Gently stir in cinnamon, cereal and pecans until completely coated. Spread as thinly as possible on cookie sheet.

Bake 12-15 minutes or until set. Immediately remove cookie sheet to cold cookie sheet or large pan. Cool completely, about 30 minutes. Break into pieces. Store in airtight container.

GULOSH
Took to Oregon Coast for Gray/Nelson Olympics. Remember Mom bringing on camping trips. Fun part about Gulosh is you can put in it whatever you want.

Easy to make. Have taken to many parties. Goes over well.

POPCORN - using Whirley-Pop
Butterscotch Almond Popcorn Mix (popcorn cookbook pg. 10)
Make popcorn with 3/4 cup kernals and oil
Melt a bag of butterscotch chips (we like Guittard)
Put popcorn in a large bowl (we use biggest silver bowl). Add 2 cups slivered almonds. Cool on a cookie sheet or wax paper. Makes about 6 cups.
One of Lisa's and kids favorites.
Snap-Crackle Popcorn and Nuts (popcorn cookbook pg. 24)
About 2 hours before serving; preheat oven to 250. Placed popped popcorn, pecans and walnuts in lare roasting pan; set aside.
Prepare carmel coating. In a 2-quart sauce pan over medium heat. Heat sugar, butter, corn syrup and salt to boiling. Boil 5 minutes, stirring frequently. Remove saucepan from heat and stir in vanilla.
Pour hot mixture over popcorn mixture, stirring to coat well. Bake mixture for 1 hour, stirring occasionally.
Spoon caramel-covered popcorn onto waxed paper to cool, stirring occassionally to seperate. Store in airtight container and use within one week - shouldn't be a problem, this is very good! Makes 21 cups.

SWEET TOUCH GLAZED POPCORN (popcorn cookbook pg. 27)
Pour into popper:
1/3 cup kernals
4 tbsp sugar
4 tbsp oil
Cook on stove. Put on Pam sprayed cookie sheet to cool. Immediately soak popper in soap water.
CORNY SNACK MIX
Yum! Very good!
3 quarts popcorn (whirly pop 3/4 cup)
1 pkg (15 oz) Corn Pops
1 pkg (15 oz) corn chips (used Fritos)
2 pkgs (10-12 oz) vanilla or white chips
In two large bowls combine everything but the chips. Melt and pour over popcorn mixture. Cool in bowls or on two cookie sheets.
