ROASTED GARLIC

Used this for the pesto chicken pizza.  Yum!  Used leftovers on cheese bread.  We all liked!  Takes 40 minutes to cook so I like to make day before I need it.  Kept in fridge.

  • heads of garlic (I like to do 5-6 at a time)
  • 3 Tablespoons olive oil
  • salt
  • pepper
  1. Preheat oven to 375°F (190°C).
  2. Using a sharp knife, slice off the top of the garlic heads to expose the cloves inside. Grab a round or square cake pan (I usually use a 9-inch one) and pour 2 Tablespoons of olive oil inside. Swirl it around the bottom of the pan to coat evenly. Place garlic heads inside, exposed side up.
  3. Sprinkle the garlic heads with a little salt and pepper. Drizzle 1 more Tablespoon of olive oil on top. You want them to have a nice coating of oil so they don't burn easily. Cover the pan with aluminum foil and roast in the preheated oven for 40 minutes.
  4. Your house will smell amazing! Remove from the oven. To remove the roasted cloves,  grab the bottom of the garlic head and gently squeeze until the cloves pop out - they will be mushy and ready to chop up for your recipe. Or spread onto a slice of crusty bread or pizza crust before baking. Yum!

MIRACLE SALVE

NOTE: Lots of people used this at the reunion for bug bites.  Next time when going to reunion make some with purify in it (good for bites).  Make some for auction item.

Cindy (Ridgeview) has cracked fingers by the fingernail really bad. I was going to bring her my healing stick but then had the idea to make a salve and bring her some. I am hoping it helps not only will her fingers not hurt anymore but she might believe oils actually work :-)

It took forever for the beeswax to melt.  Not sure if there it a kind that melts faster?  I think next time I might soften the coconut oil in water first as well so it goes faster.  Took over an hour to make this.

Update: Facebook oil lady (Diane Shephard) makes a similar recipe she puts in in 1 oz tins and suggests 8-10 drops per tin.

On LOW put a little bit of water in a pan and then put in a glass bowl the following:

2 T - 3 T beeswax (I did 2)

melt - could take 15 + minutes

Then add:

1/4 c coconut oil
1/2 c olive, avocado (can get at Costco for a good price) (I added grape seed oil - also added about 1 tsp vitamin E)  Facebook oil lady uses Apricot oil.
2 T shea butter

melt - could take 15+ minutes

Cool slightly and add 20 drops of essential oil.
10 lavender
6 lemon
2 malaleluca
2 frankinsense).

Pour into jars. This makes 2 small jars.

Made another batch to give to Lisa and Jenna for Christmas - added helichrysum

2/27/18 UPDATE:
We needed neosporin and thought this would work just as well.  Made another batch but did it like this:
6 lavender
4 lime
4 melaleuca
2 tangerine 
2 frankincense
2 helicrysum
*Scott had a blister on the bottom of his foot.  He put this on it and it was better the next day.

3/1/18 UPDATE:
Met everyone at lunch at Dickey's.  Alise had some cuts on her ankles.  It made me so sad I didn't have any of my salve to put on it.  We will be seeing them on Saturday for Forrest bday party (turning 1) so I decided to make some to give to Kambria.  I added 5 less drops since it will be for the kids.

2 melaleuca
2 frankincense
2 tangerine
1 helicrysum

Kambria told me one day Alise said, "Aunt Shelle made me better." (or something like that)  Every time we would meet at Dickeys she would show me her owies and I would put on some Miracle Salve (keep it in my purse now)

THIN PIZZA CRUST

THIN PIZZA CRUST
Yum!  We really liked this.  Makes 3-4 crusts.  Used round stoneware and the oil dripped in oven.  Next time only use extra oil if using cookie sheet.

Keep on reading for the SECRET TIP!

4 1/2 cups flour (did 3/4 c wheat)
1 tsp. salt
1 tbs. yeast dissolved in 
1 3/4 cups warm water
1/4 cup olive oil (plus more for pans)

Dissolve the yeast in your warm water.  

Add all ingredients together in your kitchen aid (or other mixer with a dough hook) and knead on medium until dough is combines and pulls away from the bowl. 

Then let is rest and rise for about 30 minutes to an hour.

This is the secret (INSERT FIREWORKS HERE!!!) to the best crust (I didn't believe it until my sister in law, Gracie, made me try it...) is to oil your pans with a ton of oil (I already knew that trick) and then oil your crust with even MORE oil once it is on the pan!

Bake your pizza with all your favorite toppings in an oven on 425 ? until your crust comes out looking like this:

You want to be able to lift the crust up without it drooping... it's almost like a cracker texture.

It is sooooooo good. The olive oil not only makes it the crunchiest crust you can imagine, but it also gives the most amazing flavor to your pizza!

Doesn't this make you want pizza right now?! This crust is perfection!

This is my "go to" crust now! Thank you! I did not use a Kitchen Aid, instead I just kneaded it for a good 5 minutes, until really smooth. Also used bread flour, b/c Alton Brown said that the extra protein in it makes a chewier crust...have to say it did! I also just baked it on a pizza stone, but I think the secret that you have is the 1/4 cup of oil in the dough! Amazing! Thank you! BTW, how many pizzas do you get out of this? I made two enormous ones. I'm thinking I could make 3, 12" thin crust as well! Great recipe!

You just made my day! Love the tip about the bread flour. I'll have to try that one out! :)

As far as how many it makes for me: 3-4 thin crusts. Sometimes I use the extra dough for calzones and freeze them... Other times I just make an extra pizza... We like cold day old pizza in our home! :)

My dad and I have a traditional pizza night whenever I come home from college. We were searching for a crispy, cracker-like crust recipe, and this is it! We do whole wheat instead of white, however the result is still fantastic! Thanks for this great recipe! We use it every pizza night now!

I love the flavor but I can't seem to get my crust as thin as yours. So it doesn't come as crispy. Any suggestions?

Make sure you water is really warm/hot. This will allow your dough to be pliable. Another tip is to add more water or oil (start with a little, and add more as needed) so the dough is more moist. It may be a little messier, but it will roll out smoother. Hope that helps! :)

I tried this with a pizza stone and lost the whole bottom of the pizza! I really enjoyed the crust that I could salvage. I am going to try again tonight with some parchment paper between the crust and stone, so I can still have the olive oil on the bottom. **fingers crossed** Just wanted anyone with a pizza stone to know :) Thanks for the great recipe! Hopefully, this will allow me to continue using my pizza stone and this new method.

Love this crust!!!! I have been in search of a great thin crust for over a year and this is the one!!! The only changes I made was that I bake the crust first for about 5 minutes in the oven before putting my toppings on it. This helped make it almost a cracker crust which we love. Awesome recipe :)

PUMPKIN SEEDS

Ingredients

  • 1 whole Pumpkin, Gutted
  •  Olive Oil
  •  Table Salt
  •  Any Seasonings You Want, Such As Cayenne, Curry Powder, Etc. (optional)

Preparation Instructions

As you gut the pumpkins, keep all the seeds—and guts—in a bowl.
Throw them into a colander and rinse them under cold water, pulling away the chunks of pulp as you go.
Spread the rinsed seeds out on a baking sheet.
Allow the seeds to dry several hours or overnight. And beware: they’re quite sticky/slimy, so don’t place them on paper towels! Just leave ‘em on the baking sheet and they’ll be fine.
When they’re nice and dry, go ahead and preheat the oven to 250 degrees.
Begin by drizzling the seeds with a couple teaspoons of olive oil.
Use your fingers to toss the seeds around to coat.
Then salt and season the seeds to taste.
Pop ‘em in the oven for an hour or so, until the seeds are light golden brown.
Let them cool for a few minutes…then let the snacking begin!
Pepitas need to be stored in an airtight container if they last beyond the first day.

CHICK-FIL-A NUGGETS



Chick-Fil-A Nuggets
This recipe came from Tara Heslop/Warren.  It is yummy, yummy!  Next time double the batch.

2 Large chicken breastscut into bite size peices and seasoned with salt and pepper

3/4 c. milk

1/4 c. pickle juice

1 egg

1 and 1/4 c. Flour

2 TBS powder sugar

2 tsp salt

1 tsp pepper

1/2 c. peanut oil, divided, or canola or vegetable oil

Directions: Whisk together egg, milk, and pickle juice and pour into a large ziplock bag or bowl. Add chicken pieces and let marinate for 2-4 hours.

Combine: flour, powdered sugar, salt and pepper in large ziplock bag or bowl and mix dry ingredients together well. Then add chicken to dry mix (shake well to coat chicken well.) however your choice is just coat chicken well. 

Heat half of the oil in large skillet or dutch oven. medium-high. (6 or 7 out of 10) Test the oil by dropping in a bit of flour mixture. If it sizzles the oil is ready. if it pops, lower the temerature a bit.

BODY SCRUBS

BROWN SUGAR SCRUB
I really like this.

1 cup brown sugar
1/3 cup (or less) olive oil 
2 T honey
Mix all together.

LEMON SUGAR SCRUB
Gave both to Kambria for b-day.  She liked this one better.  I haven't made it with almond oil (too spendy) yet.  
UPADATE: I have given this to others for birthdays. Everyone has really liked it.  Jessica Egbert told me she did some research and how good sugar is for your skin (healing wise).  

Mix:
2 cup sugar
1/4-1/3 coconut or almond oil
Add:
4-5 (or more) drops of lemon (or another kind) essence oil


BROWN SUGAR BODY SCRUB
I haven't tried this, but I would like to. Found in the SHAPE Magazine.

1/2 cup ground almonds
1/2 cup ground oatmeal
1/2 cup packed brown sugar
1 tsp vanilla extract
1/4 cup almond oil (I wonder if coconut would work too??)
2- 1 cup containers with lids

Combine the first 3 ingredients in a food processor until well blended. Place in a bowl. Add vanilla, then slowly stir in oil until the mixture has a paste-like texture. Apply to wet skin at room temperature concentrating on dry, rough patches. Thoroughly rinse with warm water.

Refrigerate leftovers for up to 5 days.

PESTO SALAD

St. Patrick's Day Pesto Pasta
Lisa made this for her family on St. Patrick's Day. I thought it sounded good. Easy to make. The kids and I loved it. Might try adding some spinach next time. I mixed the spinach noodles and whole grain linguine noodles.

1 1/2 cups tightly packed, washed and dried basil leaves
1/2 cup walnuts
2 chopped garlic cloves
2/3 cup olive oil
2/3 cup grated Parmesan cheese
1/4 tsp. salt
1/4 tsp. black pepper
1 lb. spinach linguine or fettuccine

Instructions
Chop basil leaves in a food processor or blender. Add walnuts and garlic. Process until finely ground. With the machine running, slowly add oil. Next, pour in grated Parmesan cheese, salt, and black pepper. Mix and then set aside.

Cook linguine or fettuccine according to package instructions. Drain and toss with the pesto in a serving bowl. Top with more Parmesan cheese. Serves 4 to 6.

SALMON

POACHED SALMON
This doesn't sound very good, but we all really liked it (especially Abagail). Dan & Judi gave us some fresh salmon. Found recipe in the 5th ward lemon cookbook pg. 79.

4 salmon fillets or steaks
---
1 1/2 cups low sodium chicken stock (I used 2 cups=one can)
juice of 1/2 lemon
chopped dill (I used Pampered Chef dill seasoning)
1/2 cup white wine (can also use grapefruit juice, apple or pear juice, ginger ale or white grape juice)
salt, to taste (didn't add)

Place salmon in baking dish (used 8" pyrex). Barely cover with remaining ingredients. Poach in 425 oven for 20 minutes. Chill in liquid (not sure what this meant, I added about 5-10 ice cubes and waited for them to melt. I think it would taste good warm too). Remove to serving platter with spatula. Serve with tarter sauce (see posting).

I made this fast, delicious, easy meal in under 30 minutes. We love salmon and I used brown rice instead of white. We like brown better here at the Nielson home-healthier too!! I hope you enjoy-

1/4 cup packed light-brown sugar
1/4 cup olive oil
3 tablespoons soy sauce
2 tablespoons fresh lemon juice (about 1 lemon)
2 tablespoons dry white wine, or water
2 pounds salmon fillet
Lemon wedges, for serving

DIRECTIONS
Preheat oven to 400 degrees. with a rack in the center. Make the glaze: In a small bowl, stir brown sugar, olive oil, soy sauce, lemon juice, and white wine until the sugar has dissolved.
Cut salmon fillet into 4 equal-size pieces; arrange, skin side down, in a single layer in a baking dish. Pour glaze over the fish, and turn to coat evenly.
Bake until fish is opaque but still bright pink inside, basting every few minutes with glaze from baking dish, 15 to 20 minutes. Serve with lemon wedges.

SALADS

CONFETTI CORN SALAD
Scott was looking at this salad very suspiciously, but he was surprisingly liked it. I really liked it. I liked it more than I like Cowboy Corn Salad. I doubled the recipe just because of the can sizes.

1 can (7 oz) whole kernel corn, drained
1 can (2 1/4 oz) slice ripe olives (can add whole olives too)
1/2 cup chopped green pepper
1/2 cup chopped sweet red pepper
2 radishes, sliced
1/4 cup prepared Italian salad dressing*

*I made my own: 1/4 c. basalmic vinegar, 1/2 cup olive oil, 1 tsp honey, 2 garlic cloves (or 1 big one) smashed. Add all together and shake.

Add all the ingredients and toss to coat.

GREEN TREASURE SALAD
This tasted really good and it was fun to have the kids help make.

1 cup green apple
1 cup green grapes
1/2 cup marshmallows
1/2 cup lemon yogurt
2 T slivered almonds
Mix everything together.

COOKIE SALAD
This recipe comes from Melody. It is very yummy! The kids loved helping me make it. A definite crowd pleaser. It is also good without the cookies.

1 pint strawberries
2 cups seedless grapes
1 small can pineapple tidbits, drained
2 bananas, sliced
1 12 oz carton Cool Whip
1 3 oz package instant vanilla or cheesecake pudding (sugar free works too)
1 cup buttermilk
1 pkg fudge striped cookies, broken

Combine fruit. Mix Cool Whip, buttermilk, & dry pudding mix in a separate bowl. Fold into fruit. Just before serving, fold in broken cookies. Serves 20. (I doubled it for the blessing.)

You can vary the fruit. If you want it just like I made it, use 2 lbs. strawberries, 5 bananas, 1 can pineapple chunks (drained), and 1 can mandarin oranges (drained). (That's just for the single recipe, not doubled.) Oh, and I found that I much prefer the store brand fudge-striped cookies (I used Kroger brand) to the Keebler variety. Cheaper and not as waxy.

ASIAN SALAD
Scott didn't like this salad, but I did. It reminded me of the one from Costco that I really like.

2 1/2 cups cooked chicken, cut into bite size pieces
1 (10 oz) bag shredded cabbage with carrots (if it doesn't have shred 2 carrots)
1 cup sliced mushrooms
2 T chopped cilantro (I didn't add)
1 cucumber, thinly sliced
1/2 cup non-fat Asian or Oriental salad dressing (next time I would use an expensive good kind instead of Kraft)
black pepper
---
1 tangerine (I used canned mandarian oranges)
3 green onions, thinly sliced

Mix everything together except green onions and tangerines. Put them on the top at the end.

DRESSING/MARINADE

I got this off the Food Network. I am going to be using it this week for a passover meal.

1/4 c. balsamic vinegar
1/2 c. olive oil
1 tsp honey
2 garlic cloves or 1 if a big clove (just a reminder you can buy a single garlic at WinCo)

Smash the cloves with the back of knife. Add everything into a container and shake.

CHEF AJ's HAIL TO KALE SALAD DRESSING
This taste like a really good peanut sauce.  I liked it.

Put everything in vitamix:
1 cup raw almond butter (unsweetened, unsalted) can get bulk at WinCo
1 cup coconut or regular water (used regular)
1/4 cup fresh lime zest & juice (about 2) 
2 cloves garlic
fresh, peeled ginger (about 1" or 3/4 oz) - used paste
2 T low sodium Tamari
4 pitted dates (soaked in water if not soft) can get in bulk at WinCo
1/2 tsp red pepper flakes (didn't add)

SWEET & WHITE POTATO SPEARS

SWEET & WHITE POTATO SPEARS
We tried these and all of us really liked them. I liked that you didn't peel the potatoes. Was easy prep. Went perfect with our BBQ.  Update: if using food processor use biggest blade.

Update: Good without the cheese too.  Also good with popcorn seasonings added.  Kids like to choose their own.

1 1/2# (2-3) sweet potatoes
1 1/2# (2-3) white potatoes
1/2 cup Kraft light Zesty Italian dressing
1/4 cup Parmesan Cheese
Parsley (fresh or dried flakes)

Preheat oven to 375. Cut up potatoes into spears. Toss in Italian dressing. Place on lightly greased cookie sheet (I lined with tin foil too). Bake 30 minutes and then turn the spears. Bake another 30 minutes. Last 5 minutes sprinkle with cheese. Once out of the oven sprinkle with parsley.

SWEET POTATO FRIES
We really liked these.  Nice and crispy.
Cut sweet potatoes into sticks (did pretty thin).  Soak in water for 30+ minutes.  Toss in cornstarch.  Put on a cookie sheet that has been covered with tin foil and sprayed with oil (Pam).  Drizzle with olive oil.  Bake for 15 minutes at 425, flip and bake 5 more minutes.

CRUMB-COATED POTATO HALVES
We all really liked these. Would like to try with sweet potatoes next. Jackson had fun helping me make.
1/2 cup Italian-seasoned bread crumbs
1 tsp paprika
1 tsp salt (didn't add)
1/8 tsp pepper
4 large potatoes, peeled and halved (I didn't peel)
2 T butter, melted
Combine bread crumbs, paprika, salt and pepper. Brush potatoes with butter (or dip) roll in crumb mix until coated. Place in a greased 9x13. Cover and bake at 350 for 1 hour or until tender.

OVEN FRIES
We really liked these.  Only had white potatoes would like to try with sweet potatoes.
I didn't measure anything just kinda added.  They were a little spicy might have added too much pepper and paprika.  Could also try other spices - onion or garlic.  

potatoes - cut into spears about 1" 
1 tsp oil
1 T sugar (didn't add that much - but the sugar helps it get crunchy)
1 tsp salt (used kosher)
pinch paprika

cookie sheet with tinfoil that has been sprayed with Pam.  Bake 425 for 30 min.  Can turn 1/2 way through.
