I was kinda surprised this really worked. I had my doubts.  Everyone really liked them. I didn't love the meat mixture, but thought it was okay.  Scott and the kids really liked it.  I would definitely make these again. So much healthier and cheaper than buying boxed taco shells.

HOW TO MAKE HARD TACO SHELLS IN YOUR OVEN, PLUS . . . A RECIPE FOR BAKED TACOS!


baked tacos This recipe has got to be one of the bigger successes I have had in the kitchen in a long time! Everyone in the family LOVED these!  Not a speck was leftover, which is always a sign that it really and truly was a HIT.
This dish has so many things going for it, that there wasn’t much chance it would be a FAIL, but one never knows with me. :-)
First of all….it’s TACOS!  I honestly don’t think I’ve ever met anyone that doesn’t like tacos in one form or another.
It’s quick and easy to make.
It’s got a “Make Your Own”aspect to it…which always makes me happy.
AND…it’s gluten-free!
Oh yeah…and it’s delicious.
Let’s start with the DIY portion of this dish…making the taco shells.
I can count on ONE HAND the number of times I have actually ever purchased hard taco shells from the store. I like the way one guy referred to them in a comment I read. He called themoverpriced preformed tortilla shapes. lol.  That pretty much sums it up right there. They are always a disappointment. Especially since crisp taco shells are my favorite.
So this tip for making crunchy taco shells in your oven was mind-blowing to me. Why oh why haven’t I known about this before now!  All the wasted years that have gone by! ;-)
Let’s not waste another minute!
How to Make Your Own Baked Taco Shells
Working with 6 tortillas at a time, wrap in a barely damp cloth or paper towel and microwave on High until steamed, about 30 seconds. Lay the tortillas on a clean work surface and coat both sides with cooking spray. Then carefully drape each tortilla over two bars of the oven rack. Bake at 375°F until crispy, 7 to 10 minutes.

What??? That’s IT?? Ridiculously easy. The only thing that makes it even slightly difficult is having to do more than one batch. Of course, in hindsight, I could have definitely done another row of shells on the back of the oven rack. Oh well, next time…because there is definitely going to be a next time…and a next time…and a next time…
Now that we have our shells, we are ready to make Baked Tacos! Why I never thought of this before completely mystifies me. It makes perfect sense. I especially like how the cheese is nice and melty instead of cold like on a traditional taco.

I have posted my version of the recipe from Lynn’s Kitchen Adventures below…but you really just need to make taco meat/filling like you usually do, fill the shells and bake them casserole style! I decided to try a variation on Lynn’s recipe and we all liked it a lot! We might just have a new go-to way to eat tacos around here. (Just between you and me, I didn’t tell No. 3 son – aka The World’s Pickiest Eater – that there was refried beans in the taco meat…and he didn’t even notice. I think he ended up having six! lol. shhhhh)
Baked Tacos
  • 2 lbs ground beef
  • 1 can refried beans
  • 15 ounce tomato sauce
  • 1 pkg taco seasoning or 2 – 3 Tablespoons of homemade taco seasoning)
  • 1 – 2 cups shredded cheese (I didn’t measure)
  • 18-20 hard taco shells (I think I used 15, but I crammed them pretty full)
  • Your favorite taco toppings.

Brown ground beef. Drain off any fat and add refried beans, tomato sauce, and seasoning.
Spoon mixture into taco shells.
Place filled shells into a 9×13 pan, standing up. Sprinkle with cheese.
Bake at 400 for 10-12 minutes or until heated through.

As you can see from the picture…I topped my taco with a Tomatillo Salsa that I purchased at a local restaurant called Loco Lizard Cantina. It is THE BEST green salsa! I really need to figure out how to make a homemade version of it. It was soooooooo good on the baked tacos! (If anyone has a good recipe…please share!)

FRITO DISH
Made this dish with the leftovers.  We all really liked it.  I had the Fritos scoops.  Crushed them with hands so they weren't so big.  Didn't add any extra salt or pepper.  Put one cheese in the mixture and 1 cup on top with Fritos.  Had with fresh cut up tomatoes, lettuce and guacamole. 

Ingredients
1 1/4 pounds ground beef
1 (16 oz.) can refried beans
1 (4 oz.) can mild green chiles, diced
2 cups cooked rice
2 cups cheddar cheese, grated, or Mexican cheese blend
2 cups Fritos (or corn chips of your choice), divided
1 cup salsa
1/4 cup water
1 medium yellow onion, chopped
1 (1.25 oz.) package taco seasoning
kosher salt and freshly ground pepper, to taste
Directions
  1. Preheat oven to 350ยบ.
  2. In a large skillet over medium-high heat, brown beef until cooked through and no longer pink.
  3. Drain fat, reserving 1 tablespoon, and saute onions until softened and translucent. 6-8 minutes.
  4. Season with salt and pepper and add taco seasoning. Return beef to pan, then add salsa, chiles and water.
  5. Bring mixture to a boil, then reduce heat to low, cover and simmer for 5 minutes.
  6. Remove from heat and stir in rice, cheddar cheese, and refried beans, and transfer mixture to a 9×13-inch baking dish.
  7. Top with 1 cup Fritos and bake for 30-35 minutes, or until cheese is melted and dish is warmed through.
  8. Remove from oven, top with remaining Fritos and serve hot.

SPEEDY HAMBURGER MEALS

Refer to packet in cookbook cupboard for more, but these are two of our favorites that we have tried.

SLOPPY JOES

Cook in 2 T of butter to soften:
1/2 cup onion
1/2 cup celery
ADD:
1# cooked hamburger
1 cup ketchup
1/2 c water
season with salt and pepper
can also add pureed carrots or squash

Cook until bubble and slightly thickened. Serve as a sandwich or on top of bread or potatoes

STROGANOFF
Cooked cabbage (about 2 cups) is a good addition.

 STIR TOGETHER AND HEAT THOROUGHLY:
1# cooked hamburger
2 T flour
1 can each of mushroom and chicken
1/4 tsp seasoned salt
1/8 tsp garlic powder
1 T Worcestershire sauce 
ADD RIGHT BEFORE SERVING:
1+ cup sour cream (good without this too)

Serve over hot cooked egg noodles or rice.

We did this with the missionaries - they had had it about a week before at someone elses house, but seemed to like it.  Asked for honey & butter to put on it which was great because I hadn't thought about it.  So good!  What was so nice about this meal is I made the dessert the day before, started the chili in the morning and got everything ready for waffles except for fridge stuff.  Then I only had to put together salad, drink and make waffles. Was easy cleanup too.

Green salad - got a bag of romaine with veggies and bad of ice berg with veggies and mixed the two.  Added tomatoes and cucumbers.

PORK CHOPS

PORK CHOPS
These are so yummy and easy!

  • 1 packet (1 ounce) Hidden Valley® Original Ranch® Salad Dressing & Seasoning Mix
  • Salt and freshly ground black pepper
  • 6 pork loin rib chops about 1-inch thick
  • Dash of paprika (optional)

Preheat the oven to 450ยบF.

In a small bowl, add the Seasoning mix, together with the salt, pepper, and paprika and mix well. Liberally sprinkle the porkchops on both sides with the seasoning mixture.

Arrange the chops on a baking sheet or try with a rack. Bake the pork chops for 20 minutes, turning once until browned or an internal temperature of 160ยบF is reached. Serve immediately.


CROCK POT PORK

1 big pack of pork chops
1 packet of Ranch
1 can cream of chicken soup
1 can water

Put all in crock pot.  Cook for 4-6 hours on low.

ITALIAN CHOPS
So good!  Found in crock pot cookbook pg. 137.

16 oz bottle Italian salad dressing (use less if only cooking 2 chops) - we really like Ken's brand
2-4 pork chops (I did 10 thin pork chops and it worked great)

Place pork chops in slow cooker.  Pour salad dressing over chops.  Cover and cook on high 6-8 hours.


Variation: add cubed potatoes and thinly sliced carrots and onions to meat before pouring over top.  


SHALOM'S PORK CHOPS


We liked these. Easy!  Cook in the oven for an hour.  See Cowboy Cookbook pg. 145.



PORK CHOPS
Made these in the instant pot.  We really liked them.  4 pork chops.  Were the thick ones from Costco.  If using thinner ones I would cut the cooking time.  I started marinating the chops in the morning then came home between jobs and put in instant pot.  Worked well!

Marinated the chops in:
1/4 c oil
1 tsp steak seasoning
2 1/2 T soy sauce

Add 1 1/2 cup water to instant pot.  Put in trivet.  Put chops on top of trivet and add marinade.  

High pressure for 8 minutes.  Let naturally release.

SHIPWRECK DINNER

SHIPWRECK DINNER
We love this easy to make dish. And I usually have everything on hand. It came from a Kraft food & family magazine.  See below for ways to hide veggies in this dish (also Bea tip).

1# ground beef or turkey
1 box Kraft Macaroni & Cheese Dinner
1 can (16 oz) stewed tomatoes, undrained
1 cup frozen green peas (brocolli & corn good too)
1 cup milk
1 cup Mozzarella Cheese

Brown meat. Stir in macaroni, cheese sauce mix, tomatoes, peas and milk. Bring to a boil. Reduce heat to medium-low; cover. Simmer 12 minutes or until macaroni is tender.

Sprinkle with cheese. Let stand 5 minutes or until cheese is melted.

Hidden Veggies:
Bea Stewart gave me a great tip - if you grate a zucchini you can hide it in spaghetti sauce or chili.  Just let is simmer all day and it pretty much dissolves.

I cut up some cabbage (about 1 cup) pretty small and grated a zucchini.  I put in the meat, some water and stewed tomatoes.  Let it simmer for 1+ hours (could do it all day). Then I added everything else.

DOUBLE-COATED CHICKEN

DOUBLE-COATED CHICKEN
Jackson had fun helping me make this chicken. We all liked it. I think next time I would prefer regular corn flakes instead of Touch of Honey Corn Flakes.


7 cups Corn Flakes (crushed to 2 cups)
---
1 cup milk
1 egg
1 cup flour
1/2 tsp salt
1/4 tsp pepper
---
3 # chicken (we used drumsticks and had about 4#) rinsed and drained (did 1/2 with skin and 1/2 without)
---
3 Tbsp butter, melted

Place crushed corn flakes in a shallow bowl. Set aside.

In a medium bowl lightly beat together milk and egg. Add flour, salt and pepper. Whisk until smooth. Dip chicken in batter. Coat with cereal. Place in a single layer on a cookie sheet that has been covered with tin foil and sprayed with cooking spray.

Drizzle with butter.

Bake at 350 for 1 hour or until chicken is tender and no longer pink. DO NOT cover pan or turn chicken while baking.

EASY DINNER SURPRISE

EASY DINNER SURPRISE
Was easy and yummy!  Double if making with guests.  Serve over rice or baked potatoes.  Went well with Sesame Steamed Broccoli (see Taylor RS pg 41) and cottage cheese. Found in crock pot cookbook pg. 94.

1 - 1/2# stewing meat, cubed
1 can cream of mushroom soup
1 can cream of celery soup
1 pkg dry onion soup mix
4 oz can mushroom pieces

Combine everything.  Cook on low 8-10 hours.  Serve over rice or baked potatoes.
