MOUNDS CAKE

This cake is really good and rich!  Would be a good one to make when taking a meal and keep half and give the other half away.  Abagail didn't like all the coconut (maybe less next time).  She gave it a 5, Jackson gave it an 8, Scott a 9 and me a 9.  I think it would be fun next time to try with dark chocolate.

You will Need :
1 Devil's Food Cake Mix
2 cups sugar (divided)
24 large marshmallows
1 1/2 cups milk (divided)
14 oz pkg. coconut
1 stick of butter
1 1/2 cups of chocolate chips
Mix and bake cake according to package directions. Combine 1 cup of sugar, marshmallows and 1 cup of milk in a med. saucepan...cook over low heat until marshmallows are melted..... Stir in coconut and spread on top of warm cake
Mix butter 1 cup sugar and 1/2 cup milk in a small saucepan.. bring to a boil...stir in chocolate chips and spread over coconut mixture.
Also Good refrigerated!

SAUSAGE ALFREDO

SAUSAGE ALFREDO
This is such a quick and easy meal.  Everyone liked it. Found in a magazine.

UPDATE: Made this again.  Everyone still loves it.  I added carrots (cooked), kale, bell pepper, sugar snap peas, peas and broccoli. 

1 pkg smoked sausage (I just used regular)
2 cups heavy cream
2 tsp Cajun seasoning (didn't add)
1/2 cup grated Parmesan
spinach, optional
diced zucchini, optional
potatoes, diced small and cooked, optional
broccoli, optional
bell pepper, opitional
8 oz pasta, cooked and drained

Prepare pasta; drain and set aside.

Saute sausage for 5 minutes.  Add cream (any other veggies I did spinach and zucchini) and seasoning and boil.  Reduce heat; simmer 3-4 minutes or until mixture begins to thicken.  Stir in Parmesan.  Add pasta and toss.

SHERBET

Now that you know the little secret , you too can look forward to year long sherbet treats any time you feel like it. You don’t have to stop at peach…. try blueberry, strawberry, pineapple, even mixed berries! This stuff is so good — like, magically good and the flavor possibilities are endless.

2 Ingredient Sherbet

  • 16 ounces of frozen fruit
  • 1 -14 oz can of sweetened condensed milk
Add fruit and milk to food processor or blender and combine until creamy. Ta-da! Sherbet
Serve immediately as soft-serve or freeze for an ice cream like consistency. I love my Tovolo Ice Cream Tub, no freezer burn – yay!! freeze for at least 3-4 hours to harden. Scoop onto a cone or into a bowl and enjoy!!
