BURGUNDY BUTTER

BURGUNDY BUTTER
I really liked this - it has a nice flavor. It was a nice variation to french bread. Scott missed the Johnny's Garlic Spread (from Costco). I think it could be added and would taste good. Probably wouldn't add as much minced garlic.

2 sticks of butter, softened (I used 1 stick)
2 Shallots, peeled and minced
3 cloves of garlic, peeled and minced (I just used minced)
1/4 cup fresh parsley, chopped
1 loaf French bread, cut lenghtwise (I only used 1/2 of the french bread but didn't 1/2 the ingredients except the butter)

Mix all ingredients (except bread) together. Spread bread generously with mixture. Broil until golden brown and bubbly. Slice and serve.

Can also be used on grilled seafood or cooked vegetables; use for sautes or as a basting sauce when roasting or grilling poultry or beef; add to sauces.

WHEAT BREAD

I really like the wheat bread recipe that is in the MADE FROM SCRATCH folder.  Same page as the orange rolls are on.

REALLY EASY WHEAT BREAD (SOFT CRUST)

Got this reicpe from Stephanie's blog who got it from - http://theemptynextlife.blogspot.com/2008/wheat-bread-for-one-year.html) I really like this recipe. I have made it a couple of time and it is very easy to work with. I have grinded the wheat both small and big - we liked both. I half the recipe because I only have 3 pans - works great for us.
UPDATE 2/13: Love this recipe.  I make almost weekly now.  I usually 1/2 the recipe and make 2 big loaves and 1 small loaf (Abagail's).

This is a 1/2 wheat 1/2 white recipe.

Mix:
7 cups wheat flour
5 cups hot water
2 T yeast
Let it sit for a few minutes. This will help the flour absorb.

Mix in:
2/3 cup honey
2/3 cup oil
1 T salt

Add:
5-6 cups white flour (until dough is no longer sticky)

If you have time: Knead bread and raise in a bowl. The more times you do this the less crumbly the bread will be. If not enough time to skip to below steps.

Divide and place in 6 medium loaf pans (7x3x2)
Raise for 40 minutes
Bake at 350 for 30 minutes

BALLOON WHEAT BREAD
Got this recipe from Valley View Ward, Rexburg ID by Charlene Walters.  She brought some to an Enrichment Meeting.  It was yummy.  A very good consistency.  Takes 15-16 cups whole wheat flour.  Not sure how many loves this would make.  My guess would be 6 ormore.

Combine:
6 c warm water
1/2 c brown sugar
1 1/2 T salt
3/4 c powdered milk
1/2 c honey
1/2 c gluten
1/4 c liquid lecithin (can be bought at health food store)
1/2 c oil

Dissolve:
4 t yeast in 1 c warm water

Blend in 5 c whole wheat flour to liquid mixture then add yeast mixture.  Blend well and kneed in 10-11 cups more whole wheat flour.  Let raise once and form into loaves and put in greased loaf pans.  Raise until double and bake for 25-30 min at 350.

This was so fun to make. Jackson liked putting on the tombstones. Great FHE activity/refreshment. I thought it tasted better the next day.

1 pkg. (16 oz) chocolate sandwich cookies (I used Oreos - but plain chocolate might work better)
3 1/2 cups cold milk
2 pkg (4 oz each) Jell-o Chocolate Instand Pudding (I used the big one)
2 (8 oz) Cool Whip, thawed
----
Milano cookies
Gel frosting
candy corns or candy pumpkins
Halloween sprinkles

Crush cookies. Make pudding and let stand for 5 minutes. Stir in 3 cups of the cool whip and 1/2 of the crushed cookies. Put into a 9x13. Sprinkle rest of cookie crumbs. Refrigerate for 1 hour or until ready to serve.

To decorate:
*Milano cookies to make the tombstones. (I thought it would be a fun idea to write our names on the tombstones with gel frosting)
*Can scatter sprinkles, candy corns or candy pumpkins if you wish
*Drop dallops of remaining whipped topping onto dessert to make "ghosts" (I used some chocolate sprinkles we had to make the ghost eyes).

5 MINUTE CHOCOLATE MUG CAKE

5 MINUTE CHOCOLATE MUG CAKE
We thought this was pretty good. It was fun eatig it out of a mug. It is pretty rich. Would be good in the summer, when I don't want to turn on the oven. Next time I would only cook for 2 minutes so it is more gooey. Would also be good with caramel added.

4 tablespoons cake flour or all purpose (plain, no self-rising)

4 tablespoons sugar
2 tablespoons baking cocoa
1 egg
3 tablespoons milk
3 tablespoons oil
3 tablespoons chocolate chips
A small dash of vanilla flavoring
1 coffee mug

Add dry ingredients to mug, and mix well. Add the egg and mix thoroughly. Pour in the milk and oil and mix well. Add the chocolate chips and vanilla flavoring, and mix again. Put your mug in the microwave and cook for 3 minutes at 1000 watts. The cake will rise over the top of the mug, but don't be alarmed! Allow to cool a little, and tip out onto a plate if desired. EAT!

(this can serve 2 if you want to feel slightly more virtuous).
